Shake up pizza night with easy recipes that put a twist on your classic cheese slice

Who said you needed a reason to throw a pizza party? Everyone is always happier with a slice (or two) of cheesy, saucy goodness, so consider this our petition to get more pies on your weekday menu. As part of our Shop This List series, chef and cookbook author Laura Vitale stopped by TODAY to share her favorite twists on pizza night that the whole family will love.

The best way to sneak in extra veggies? By piling them onto a pizza, of course. Vitale's stuffed spinach pie is packed with mushrooms, onions and two whole boxes of leafy greens, then topped with the remaining dough to form a double crust. Or, how about breakfast for dinner with a bacon, egg and cheese-style pie? Popping it in the oven on a preheated baking steel will ensure an extra crispy crust. For dessert, Vitale is whipping up zeppole with the same homemade dough used for her savory recipes — but this time deep-frying the leftovers to make a donut hole-like treat. They're then rolled in sugar and, if you really want to take sweetness up a notch, served with a side of chocolate-hazelnut spread or jam for dipping.
