For a db involved in db mirroring, what steps do I take to move its data and log file to another drive?

Break the mirror, perform the move, restart mirroring. The move doesn't break the log chain so there should be no need to re-seed the mirror. This of course all depends upon the size of the DB as that drives the downtime to move the data and log files.
