OBJECTIVES
At the end of the class, 80% of the student should be able to:

A. Identify and describe the different types of petit fours and their characteristics.
B. Appreciate the artistic presentation and cultural significance of petit fours in
pastry making.
C. Prepare and decorate petit fours using proper techniques and creative designs.
WHAT IS PETIT FOUR?
• Small biscuits and cakes tastefully decorated
• Sweet melt and cakes designed to be served as dessert with
after dinner coffee or cocktails.
• Petit fours should be small.
• They are often made into different shapes
• They are delicate, crisp, fresh, attractive, light and designed
to be swallowed in just one or two mouthfuls.
4 TYPES OF PETIT FOURS
Petit Fours Sec (Dry Petit Fours) – These are dry, crisp, and often biscuit-like pastries.
•Examples include:
•Madeleines
•Tuiles
•Shortbread cookies
•Macarons

Petit Fours Glacé (Iced Petit Fours) – These are small, delicate cakes covered in glaze or
fondant. Examples include:
•Mini sponge cakes with fondant icing
•Opera cake slices
•Petit four cakes with fruit or nut fillings
4 TYPES OF PETIT FOURS
•Petit Fours Frais (Fresh Petit Fours) – These include pastries that require
refrigeration due to their fresh ingredients. Examples include:
•Cream puffs
•Éclairs
•Tartlets with fresh fruit or mousse
•Petit Fours Salé (Savory Petit Fours) – These are bite-sized savory
appetizers often served at events. Examples include:
•Mini quiches
•Cheese puffs (gougères)
•Canapés
Iced petit fours
Iced Petit Fours are small, sweet pastries that are
coated with a smooth layer of icing or fondant. The
icing gives them a glossy, finished appearance and
adds a sweet flavor. These petit fours are often made
from sponge cake or other soft cakes, layered with
jam or buttercream, then coated with a thick glaze or
fondant, and decorated with additional details like
piped icing or edible decorations. They are commonly
served at special events like weddings or tea parties.
