Bicol Express is a spicy Filipino pork stew that originated in the Bicol Region in the 1960s. People in Bicol would sell the dish from plastic bags to passengers boarding the Bicol Express passenger train. Express
Bicol Express is a spicy Filipino stew
⦿ During the 1960s, the Bicol Express dish was created and sold
by people in the Bicol Region despite a lack of name for the
dish. Bicolanos would wait at the Sipocot station, Camarines Sur, for
a train to make a temporary stop and they would start selling the dish to
the passengers.The dish was stored in a plastic bag and the rice was
wrapped in a bundle of taro leaves.
⦿This dish was termed by Laguna resident, Cely Kalaw, during a
cooking competition in the 1970s in Malate, Manila. The name of the
dish was inspired by the Bicol Express railway train (Philippine
National Railways) that operated from Tutuban, Manila to Legazpi,
Albay

⦿ As a result of her cooking competition experience in the 1970s, She


created this new dish in response to her customers' high interests for a
spicy and sizzling Taro dish.
Ingredients in making
Bicol express
•1 ½ pork sliced into pieces
•5 pieces Thai chili pepper
•2 pieces long green pepper
•¼ cup shrimp paste
•2 cups coconut milk
•1 cup water
•1 piece onion chopped
•5 cloves garlic crushed
•3 tablespoons cooking oil
•Ground black pepper to taste
Step by step procedures in making
Bicol Express
1.Heat oil in a pan.
2.Saute onion and garlic. Add pork once the onion softens. Cook until
light brown.
3.Pour water and coconut milk. Let boil. Cover and cook between low to
medium heat for 40 minutes. Add more water if needed.
4.Stir-in the shrimp paste and chili peppers. Continue to cook covered for
8 minutes.
5.Season with ground black pepper. Continue to cook until sauce reaches
desired consistency.
6.Serve with warm rice.
