Definition of Rum
• Rum is a distilled alcoholic beverage made from
sugarcane by-products such as molasses, or directly
from sugarcane juice, by a process of fermentation and
distillation. (Merriam-Webster, 2020)
History of Rum (Brief)
• Originally, rum started out before it was even called rum. Way
back before the word rum was recorded, there was a drink
referred to as “wine sugar,” during the 13th century.
• Rums originated in the West Indies and are first mentioned in
records from Barbados in about 1650. They were called “kill-
devil” or “rumbullion” and by 1667 were simply called rum.
• Some said that rum is derived from the Latin word-Saccahrum

• Samuel Morewood (1824), a British etymologist, suggested it might be from the
British slang term for “the best”, as in “having a rum time.”
• . The beginning of rum is tied to the history of slavery. Slaves were traded to the West
Indies for molasses, and the molasses was made into rum. Then, that rum was traded
for more slaves.
• It was enslaved people who realized that molasses could be fermented into alcohol.
That alcohol itself was the very first start of rum. Later on, the process of distillation
was used to refine the alcohol into the first products we would truly recognize as rum.
• Many places now produce their own rum from start to finish around the world.

Light/White/Silver Rum
• This rum gets its name from the lack of color. It is usually aged for less
than a year before it is sold. When light rum has been aged, it usually has
its color removed by charcoal filtration.
• It has lower alcohol content, and tendency to mix with other flavors.
• Brands of white rum include Bacardi Superior Rum, The Real McCoy 3
Year Silver Rum, Owney’s White Rum and Diamond Reserve White
Rum
• The majority of light rums come from Puerto Rico.
Aged/Matured Rum
• Aged rum is generally aged in oak barrels for several years,
which gives it a more intense flavor than regular rum.
• It is a little more expensive than other types of rum due to the
lengthier production process.
• It can be consumed straight up or on ice and for that reason is
also known as sipping rum.
• It is smooth enough to drink without any mixer.
• Aged rums include Angostura 1824, Appleton Extra, Atlantico
Private Cask, Bacardi 8, El Dorado 21 Year
Gold/ Phale Rum
• Gold rum is quite versatile and can easily take the place of a
white rum in a cocktail where you're looking for a little more
punch for your pour.
• Gold rums are often aged several years or more and some
coloring may be added to provide consistency.
• Gold rums are often enjoyed on the rocks or neat, in addition to
being used in cocktail recipes.
• Examples of gold rums include: Barrel, Abuelo, Appleton
Special, Barcelo Dorado, Brugal Añejo, Bermudez Ron
Dorado, Cacique Anejo Superior, Cockspur 5 Star, Diplomatico
Añejo, Doorly’s 5, Don Q Gold, El Dorado 5, etc.
Dark/Black Rum
• Dark Rum also known by their particular color, such as brown, black, or red
rums, are classes a grade darker than gold rums.
• They are generally aged longer, in heavily charred barrels, giving them much
stronger flavors than either light or gold rums, and hints of spices can be
detected, along with a strong molasses or caramel overtone.
• In addition, dark rum is the type most commonly used in cooking.
• Most dark rums come from areas such as Jamaica, Haiti, and Martinique
• Examples of dark rums include Cruzan Estate Dark, Bacardi Select, El Dorado
5, Angostura 1919
• Flavored rums are infused with flavors of fruits,
such as banana, mango, orange, citrus, coconut,
Flavored starfruit or lime, and other tropical plants and trees
bring luscious tones to flavored rum varieties.
Rum • These are generally less than 40% ABV (Alcohol by
Volume).
• They mostly serve to flavor similarly themed
tropical drinks but are also often drunk neat or with
ice.

Flavored, Malibu Pineapple Rum, Captain Morgan
Sliced Apple
Spiced rums obtain their flavors through the addition of
spices and, sometimes, caramel.
Spice
Rum Most are darker in color, and based on gold rums.
Some are significantly darker, while many cheaper
brands are made from inexpensive white rums and
darkened with caramel color.
Among the spices added are cinnamon, rosemary,
absinthe/aniseed, or pepper
Examples of spice rum: Sailor Jerry Spiced
Rum, Calypso Spiced Rum, Diamond Reserve Spiced
Rum etc.
Overproof Rum
• Overproof Rum is any Rum that contains more than 50 percent alcohol by volume.
• Types of rum which contain higher concentrations of alcohol are often labeled as
overproof e.g. Bacardi 151 is probably the most highly-referenced overproof rum in pop
culture, High wine
• The modern distillation process produces a spirit that is generally 160 to 190 proof
alcohol.
• Overproof rums tend to be more popular in the Caribbean Islands where locals prefer a
stronger drink.
• They’re also used in cooking recipes that call for rum to be ignited in flame (flambé) or
drinks that blend a very strong rum into their recipe.

a by-product called molasses which
forms the base of most rums.

• Yeast, water is added to molasses to start fermentation

Then the fermented liquid is distilled
-Pot still distillation for darker rum
-Patent still distillation for lighter rum

(4) BLENDING
• Blending is done based on the age, style and
type of rum.
• Marrying of rum takes place in oaks casks.
• It is bottled and package after filtering.

(5) AGEING
Then, as per the type of the rum the distillate is aged.
*Light Rum: aged for 3 months
*Golden Rum: aged for 18 months
*Dark Rum: aged for 3 years & more. It is matured in
charred oak barrels
Caribbean: epicenter of world's rum production
Haiti: heavier rums, doubled distilled pot
still, full flavored and smooth tasting rums
Jamaica: rich aromatic rum, pot still, light to full
Rum flavored, used for blending
Production Cuba: light bodied, crisped and clean rum,
column still
Regions Dominican Republic:: full bodied rum, column
still
Puerto Rico: light and very dry rum, column still
The Virgin Islands: light mixing rums, column still,
unaged cane spirits called Cachaca.
Martinque: both Pot and Column still, Rhum Agricole, &
Rhum Industriels
Rum Guyana: rich heavy Demerara Rum, both Pot &
Column Still Aged for extended period, used for blending
Production lighter rums
Regions Barbados: light sweetish rum, both Pot & Column Still.
Oldest rum producer in the world.
Con't Australia: White and Golden rum, doubled distillation,
both Pot and Column still.
Venezuela: barrel Aged Golden & Dark rum.
Canada: Golden rum imported and Aged for 5 years

What is considered a cocktail?
• A cocktail drink is any mixed drink with at least two cocktail ingredients
and is usually alcohol-based.
• Cocktails typically have a base liquor, like vodka or gin, and come with
other flavored ingredients like fruit juice.
• Some drinks are simple and only involve two liquid ingredients.

• In conclusion, it is evident that rum is prepared from
cane juice and it is a distillation of alcoholic beverage
made by a process of fermentation and distillation

• Rum is also referred to as spirits, since it's an alcoholic
beverage.
