Demonstration Script for Table Service Sequence

Trainer:

Food Attendant: “Good morning mam/sir, Welcome to (Name of restaurant).


Guest: “Good morning.
Food Attendant: “Do you have a table reservation mam/sir?”
Guest: IF Yes:
FA: May I know your name, please?
Guest: I am (give your name)
FA: Okay mam/sir let me check your name in our reservation list.
(check the list of reservations and find the table number of the guest).
Okay mam/sir we confirm your reservation under the name of (state again
The name of the guest) we prepare a very nice table for you, this way please.”
Guest: If No:
FA: May I suggest a table for you mam/sir, which will you prefer mam/sir smoking area, non-
smoking area or viewing the garden?
Guest: (Non-smoking Area)
FA: This way please (with an outreached hand), is this table all right with you mam/sir?
Guest: Yes
FA: Ok, please have a seat.
Guest: Thank you
FA: (presenting the beverage list, standing on the right side of the guest)
By the way mam/sir, I am (state your name) your food attendant for today, I
Present to you our beverage list for your beverage selection.
Guest: Thank you
FA: May I unfold the table napkin and place it on your lap mam/sir? (wait until the guest responds)
Guest: Sure, thank you
FA: (unfolding the table napkin) Excuse me, mam/sir, I’ll be back to serve your water.

FA: (serving water) Excuse me mam/sir, here is your iced cold water.

FA: I’ll be back to take your beverage order.

beverage order now, if not may I suggest some items for your own selection?
Guest: Okay, suggest.

FA: for your aperitif drinks mam/sir, would you like to try our best seller of the week,
(name of the drinks and their description). And for your refreshing drink, our bartender prepares
something special that will make you feel relieved from thirst. It’s (name of the drink
and description). Would you like to try all that I have mentioned mam/sir? May I take your order now?
Guest: (It depends on guest preference) Okay I would like to try the refreshing drink .
FA: (repeating the order) Okay mam/sir, may I repeat your order if got it right, you order (mentioned
the name of drink) Am I right mam/sir?
Guest: Okay.
FA: Excuse me, mam/sir, I’ll be right back to serve your bread and butter, your drinks will be served after 3
mins, is it okay with you mam/sir? May I take the menu mam/sir?
Guest: Yes.

FA: (serving bread and butter) Excuse me mam/sir, here is your bread and butter, by the way, mam/sir,
what would you prefer plain bread or Spanish bread? How about the butter mam/sir, how would you
like me to serve it, spread it on top of the bread, or place it beside your bread?
Guest: Spread on top of the bread, pls.
FA: Okay mam/sir (spreading butter on the top of the bread) enjoy your bread and butter mam, I’ll be back

for the appetizer, we have (mention the name of the dish and description)
for your soup mam/sir, would you like to try our hot steaming soup the ,
how about salad mam/sir, we have fresh and nutritious with thousand island dressing,
for your main course mam/sir, would you like to have something light such as (white meat)
(if you want to offer heavy meat) would you like to have a heavy meal such as (red meat)?
How about your wine mam/sir, since you order (red meat- red wine, white meat- white wine) It is best
to complement your order main course, It’s Two ocean red wine, originated in Australia, vintage year
1945 with 27% prof of alcohol. (Explain the wine: label, origin, vintage year) and
for your dessert mam/sir, would you like to try our creamy and tasty (name and description

table set up and remove the unnecessary utensils on your table.

FA: (serving of food) excuse me mam/sir, here is your (mention the name of the food). Enjoy

Guest: Thank you.
FA: Excuse me mam/sir are you done with your food? May I remove the soiled plates?
Guest: Yes.
FA: Your soup will be serve next, excuse me.

(After serving the food from appetizer to main course, removed the show plate, and cruets then before serving the
dessert perform crumb down the table)

(while crumbing table apply 3 minutes check to guest by asking the guest experience in your
restaurant).

Guest: Give comments, its either positive or negative.
FA: (Positive comments) Thank you so much for your positive commendations mam/sir, you deserve an excellent service
being our guest and we are happy to serve you.
FA: (negative comments) I’m very sorry mam/sir, I have taken notes of your comments for corrective actions, I assure you
that it would not to happen again. Thank you for giving us an honest comment’s.
Excuse me mam/sir your dessert will be serve next.

(serve the dessert and beverage order of the guest if there is)

If the guest will order hot dessert, serve coffee while eating cake, but if the guest will order cold dessert let them finish
the dessert, remove the soiled plates before serving the coffee.

FA: Excuse me mam/sir, here is your coffee.


Guest: okay
FA: Excuse me mam/sir, I’ll be back to close your bill.
FA: Excuse me mam/sir may I present to you your bill, how will you settle your bill mam, is it cash or credit
card?
(If cash) Okay mam, May I have your cash now. (count the money) I received I’ll be back for your change
and receipt.

FA: Thank you for calling Room Service, Good morning, this is speaking, May I help you?
