BIKO ROASTERY is a wholesale specialty coffee roastery located in plaga, bali. It is our goal to
support our great local independent coffee houses, restaurants, and coffee enthusiasts
everywhere by providing exceptional beans and blends at competitive prices.

It takes attention to detail to make sure you’re consistently roasting and selling the best
possible coffee. We always testing and adjusting to make sure you’re getting an incredible
experience in every cup.

As we’ve grown, we’ve had the opportunity to roast many different coffees and taste
thousands, helping us narrow in on exactly the flavor we’re looking for.

We’re also committed to working closely with importers, exporters, and farmers to make sure
our coffees are ethically sourced and producers are compensated fairly for their hard work
growing and picking the beans we use at our roastery.

WHAT IS ROASTING?

Roasting coffee transforms the chemical and physical properties of green coffee beans into
roasted coffee products. The roasting process is what produces the characteristic flavor of
coffee by causing the green coffee beans to change in taste. Unroasted beans contain
similar if not higher levels of acids, protein, sugars, and caffeine as those that have been
roasted, but lack the taste of roasted coffee beans due to the Maillard and other chemical
reactions that occur during roasting.

WHY IS ROASTING IMPORTANT – OR IS IT?
Coffee beans are seeds matured in coffee cherry. They are then processed and dried to
coffee beans. Before roasting, coffee beans are green in color and have a beany and
grassy aroma. Actually, green coffee beans do not smell like coffee at all. When we roast
coffee, we develop 800 to 1000 different aroma compounds. These compounds make the
flavour of the coffee. With roast profiling, we can affect the existence of these aroma
compounds in coffee and also determine the flavour of the coffee.
