Local food
Titi corn

Titi corn is a kind of food ingredient made from corn raw materials
whose manufacturing process uses tools / stoneware made of earth
(pottery) as a container for roasting / frying and stones as big as an
adult human fist to crush / crush corn until flat / resembles a piece.
corn titi is a typical food of the people of East Flores, Lembata and Alor.
However, until now its existence remains behind (not yet popular)
because of the manufacturing process? specifics that only certain
people can work on and? has been in the foregoing period. Now the
existence of titi corn in the eyes and tongues of the people of East
Flores, Alor and Lembata has always been in demand and even very
meaningful in the lives and lives of their people. It is called titi corn
because of the manufacturing process, corn that has been roasted in a
ground pot in the Book (dititi-language lamaholot).
In general, titi corn is often used at breakfast, entertaining guests or as a provision on a long trip / tour even
for school children in the field, because the specialty of this titi corn is that it lasts for months as long as it is
placed in a dry container.
TOOLS AND MATERIALS
- The parent stone, which is a stone that is large and the surface is flat
- The child of the stone/small in size, that is, the stone whose shape? round with the size of an adult's fist.

- Kneading device is made of a piece of wood/bamboo measuring 20 - 25 cm.
While the material needed is:
- Corn that is still in the form of a barrel (using corn in the form of a barrel so that the size of the corn used is
the same). To get good results, the corn used must be really selected, which comes from large corn kernels
with a shiny texture.
HOW TO MAKE IT
1. The fire is ignited using quality wood (producing good / resistant embers) such as kusambi, kukung,
lamtoro, etc.
2. Place the earthen pot on the stove where the fire is burning.
3. The selected corn is picked up halfway; after that, it is put into the pot the soil that is heating up as much
as a handful or 100 seeds per stir. Then stirring so that the heating is completely evenly distributed.
4. After the corn is half cooked, the research process is immediately carried out. If the research is carried
out not on time (too fast / too slow) then when the corn is entrusted, it will be destroyed and if it is too late,
the corn will bloom which makes the appearance of the titian results not good.
5. The fire used as a heat source is tried not to be too big. Usually the results are good if the heat source is
from embers and not the flame / corn is roasted.
Jagung bose
jagung bose is one of the typical dishes
originating from East Nusa Tenggara, especially
the mainland of Timor. This food contains a lot of
carbohydrates because it uses corn and beans,
and is usually used as a substitute for rice.
Even though it uses corn and beans, this food has
a soft and savory texture because it is made to be
like porridge. This special food is usually eaten
together with sambal lu'at, se'i meat, or grilled fish.

1. 400 grams of flat yellow corn

•4. 500 ml of coconut milk

•1. First take the yellow flat corn and then mash it in the pestle until the epidermis comes out.
Mash the corn into a smooth but not grainy manner. It is enough to be only 2 or 4 parts, the point
is until the epidermis comes off.
•If so, soak the pounded corn together with the rice overnight. After soaking overnight, remove and
drain the water.
•2. Then wash the mashed yellow corn together with peanuts and rice beans until completely
clean. Then turn on the stove fire and cook the mashed yellow corn, peanuts, and rice beans
together with 500 ml of water.
•Cook to a boil and the water begins to decrease and shrink. If it has shrunk, pour another 500 ml
of water into the corn stew. Cook until the water boils and shrinks once more.
•3. After the water is reduced for the second time, immediately try to taste the corn and beans. If
you feel that it is soft enough and not hard anymore when chewed, then you can immediately add
500 ml of coconut milk and cook it again until it boils. But if you feel that the corn and beans are
still a bit hard, you can repeat the previous step again. Then cook until the coconut milk starts to
shrink slightly. Do not forget to occasionally stir to mix well.
•4. Then correct the taste. If you feel that it is just right, you can immediately lift it up and pour the
bose corn into a bowl. NTT's signature bose corn is ready to be served.
Rumpu rampe
These vegetables are cooked by sauteing, rumpu
rampe usually consists of papaya flowers, Moringa
leaves, young papaya fruit, papaya leaves, cassava
leaves, and banana heart.
Basically this stir fry is made from boiled
vegetables and then sauteed with simple spices. If
you want to make rumpu rampe, follow this recipe:
• Grass material:
• Papaya flower 250 grams
• Papaya leaves 250 grams
• Cassava leaves 250 grams
• Banana heart 250
• Spice:
• Shallots 50 grams
• Garlic 30 grams
• Pecan 30 grams
• Salt to taste
• Pepper to taste
• Adequate flavoring
How to make a rampe:
1. The step in making rumpu rampe is to boil
papaya leaves and papaya flowers in boiling
water. This aims to remove the sap and reduce
the bitter taste. Lift and drain.
2. Boil the cassava leaves and banana heart with
the same method.
3. Puree the spices, which consist of shallots,
garlic, and candlenuts. Then fry until fragrant.
Add vegetables, salt and pepper. Cook until done
and serve warm.
Focal drink
Moke
Moke is a typical drink from
the island of Flores made from
siwalan (palm tree) and palm
trees. This drink has many
names such as sopi, dewe,
and moke. But the most
familiar and characteristic
name of the island of Flores is
Moke.
Tuak manis
Sweet wine uses the basic ingredients of sugar palm
derived from the palm tree. The part used is white water
that comes out of the palm tree and usually has a thick
texture.
Almost the same as brem, sweet palm wine can also be
fermented first for consumption. Usually, palm wine that
has been fermented first usually contains alcohol.
So for those of you who want to drink sweet wine
without alcohol, you can directly order sweet wine
without alcohol. Vice versa, if you want to drink sweet
wine with alcohol you can also order it directly when
visiting Nusa Tenggara.
It would be nice if you visited Nusa Tenggara not to
forget this drink. Because you will very rarely find it in
other places.
This drink is also widely available on the roadside and
certain places in Nusa Tenggara. So it will be very afdol
if you visit Nusa Tenggara and don't buy this drink.
Sumba coffee
Sumba coffee is a type of Robusta. It grows and
develops well in the humid highlands and is
quite cold in the Wewewa area and one or two
villages in the Kodi area, Southwest Sumba
Regency. This means that smallholder coffee
producers on Sumba Island only exist in
Southwest Sumba.
In the coffee flavor competition at the
Nusantara Coffee Festival, after passing a taste
test at the Indonesian Coffee and Cocoa
Research Center in Jember, East Java, last
August 2017, Sumba coffee won the award as
the Best Coffee in Indonesia.
Famous place
Komodo island
Komodo Island is an island located in the Nusa Tenggara
Islands, located to the east of Sumbawa Island, which is
separated by the Sape Strait. Komodo Island is known as
the natural habitat of Komodo dragons.
This island is one of the Komodo National Park areas
managed by the Central Government.
Administratively, this island is included in the area of West
Manggarai Regency, Komodo District, East Nusa Tenggara
Province, Indonesia. Komodo Island is the westernmost tip
of East Nusa Tenggara Province, bordering West Nusa
Tenggara Province.
On Komodo Island, Komodo dragons live and breed well.
As of August 2009, on this island there are about 1300
Komodo dragons. Coupled with other islands, such as
Rinca Island and and Gili Motang, their overall number
reaches about 2500 heads. There are also about 100
Komodo dragons in the Wae Wuul Nature Reserve on the
mainland of Flores Island but it does not include the
Komodo National Park area.
Mount mutis
Mount Mutis is one of the mountains on the
island of Timor which has an altitude of 2,458
meters above sea level and is the highest
mountain in the West Timor region (Indonesia). It
is administratively located on the border of North
Central Timor Regency with South Central Timor
Regency, East Nusa Tenggara Province. This
mountain has three peaks and is a Mount Mutis
Nature Reserve which is famous for its rich
marble. People living in this mountain area call
the marble Faut Kanaf or stone name. The people
who inhabit it are one of the oldest tribes in NTT,
namely the Dawan Tribe.
Lake kelimutu
Lake Kelimutu, known as the "Three Colors Lake", is
located in Kelimutu National Park. It is referred to as
the "Tricolor Lake", because it often changes its
color to red and dark brown.
You can enjoy the beauty of this lake, after climbing
Mount Kelimutu which is at an altitude of 1631
meters above sea level.

NTT traditional house
Is kampung
bena
Kampung Bena is the oldest traditional village located in
Ngada Regency, Flores, NTT, precisely in Tiwuriwu Village,
Aimere District.It is located on the top of a hill with the
background of Mount Inerie, thus making the atmosphere of
Kampung Bena beautiful and calm. If you visit Kampung Bena,
Moms will meet 43 NTT traditional houses.
The arrangement of the house is very unique because the
circular shape forms the letter U, or from afar it looks like a
ship with 2 rows of traditional houses facing each other.
The traditional house in Kampung Bena is called sa'o or
interpreted as a house. This Sa'o is inhabited by 9 tribes,
where each house has its own name.
For example, Sa'o Saka Lobo, the house that represents the
ancestors of the men and Sa'o Saka Pu'u which represents
the ancestors of women, and other sa'o-sa'o.
Sumba cultural
house
Sumba Cultural House is one of the cultural tours in Nusa
Tenggara that is not to be missed. The location of this
tourist attraction is on Jalan Rumah Budaya Number 212,
Southwest Sumba Regency, East Nusa Tenggara. This
place is a museum devoted to introducing Sumba culture.
There are many functions of the Sumba Cultural House
including for research, introducing Sumba culture, tourist
attractions, and also used for meetings.
At the location of the Sumba cultural house, visitors can
see various collections of historical objects collected by Fr.
Robert Ramone. In addition to enjoying various cultures and
historical collections, you can also enjoy the unique and
instagramable shape of the building.
