beans, simmered slowly with vegetables and spices to create a flavorful, nutritious
soup.
🫘 Basic Ingredients:
2 cups dried red or black beans (or 3-4 cups cooked beans)
1 onion, chopped
3 garlic cloves, minced
1 bell pepper, chopped (optional)
2 medium tomatoes, chopped or 1 cup tomato sauce
2 carrots, diced
1 stalk celery, diced (optional)
4-6 cups water or broth
1 bay leaf
1 tsp ground cumin
Salt and pepper to taste
Fresh cilantro or parsley for garnish
🍲 How to Make Sopa de Frijoles:
1. Soak the Beans (if using dried):
Soak beans overnight or quick soak by boiling for 5 minutes, then letting
them sit for 1 hour.
2. Cook the Beans:
Drain soaking water, rinse beans. In a large pot, cover beans with fresh water
and cook until tender (about 1–2 hours).
3. Sauté the Vegetables:
In a separate pan, heat oil and sauté onions, garlic, bell pepper, carrots, and
celery until soft.
4. Add Tomatoes and Spices:
Stir in chopped tomatoes or tomato sauce, cumin, and bay leaf. Cook for a
few minutes.
5. Combine and Simmer:
Add sautéed veggies to cooked beans (with their cooking liquid). Simmer for
20–30 minutes to blend flavors. Season with salt and pepper.
6. Optional: Blend Some Beans
For a creamier texture, blend a portion of the soup and stir it back in.
7. Serve
Garnish with fresh cilantro or parsley and serve hot, ideally with white rice or
crusty bread.
