Phở (pronounced fuh) is a traditional Vietnamese soup made with a fragrant
broth, rice noodles, and typically thin slices of beef or chicken, topped with
fresh herbs and condiments. It's comforting, complex, and deeply flavorful—a true
national dish of Vietnam.
🍜 Classic Beef Phở (Phở Bò) Recipe
🧂 Ingredients for the Broth:
2–3 lbs beef bones (marrow bones and knuckle bones)
1 lb beef brisket or shank (optional, for serving)
1 onion, halved
1 large piece of ginger, halved
3–4 star anise pods
1 cinnamon stick
3 cloves
1 tbsp coriander seeds
1 tbsp fish sauce (to taste)
Salt and sugar (to balance)
3–4 quarts of water

Rice noodles (bánh phở, flat rice noodles)
Thinly sliced raw beef (eye of round or sirloin)
Bean sprouts
Fresh herbs: Thai basil, cilantro, mint
Lime wedges
Sliced jalapeños or Thai chili
Hoisin sauce and Sriracha (optional for serving)
Thinly sliced onion and green onions
🍲 Instructions:
1. Blanch the Bones
Place bones in a pot, cover with water, boil for 10 minutes.
Drain, rinse bones to remove impurities. This makes a clear broth.
2. Char Onion and Ginger
Roast onion and ginger under a broiler or on open flame until charred. Peel
and set aside.
3. Make the Broth
In a clean large pot, add blanched bones, charred onion and ginger, spices,
and water.
Bring to a boil, then reduce to a gentle simmer for at least 6–8 hours
(longer = better flavor).
Skim any foam or fat as needed.
4. Season
Add salt, fish sauce, and a pinch of sugar to balance the broth.
Strain the broth through a fine sieve.
5. Prepare Noodles & Toppings
Soak or boil noodles according to package directions.
Thinly slice raw beef; it will cook in the hot broth.
Set out garnishes.
6. Assemble
In a bowl, add noodles, raw beef slices, and ladle boiling hot broth over top
to cook the meat.
Garnish with herbs, onions, bean sprouts, lime, and optional sauces.
🍗 Chicken Phở (Phở Gà) Variation:
Use a whole chicken instead of beef bones.
Simmer 1.5–2 hours.
Use the shredded chicken meat for serving.
