Meal 1: Potato Recipe

Ingredients:

Irish/sweet Pototoes
1 bulb Onion
1 big Red Bell Pepper
Cheese
2 SpringOnion
4 Eggs
Salt t Iio taste
1 tablespoon Brown
Sugar ½ White Sugar
Cooking oil
Bread crumbs
500mls Milk
200g Flour
Normal Pepper

How to Prepare

● Cut the potato and Cook until it becomes very soft

● Remove the potato water

● Mash the cooked potato.


Cut the bulb onion, 1 big red bell pepper and spring onion into
cubes.

● Grate the Cheese


● Stir fry the onion in cooking oil for like 2 min, add the red bell
pepper and stir fry for 3-4 mins.

● Add the above mixture to the already mashed potato.

● Add the grated cheese


Add the Spring Onion to the mixture

Add Salt to taste and pepper

Break two pieces of egg into a bowl and add 500ml of milk

Add 1 tablespoon of brown sugar and half tablespoon of white
sugar inside the egg mixture.

● Stir well to inculpate

● Add flour 200g to the mixture

● Mix well until it has no crumbs

● Add oil in a frying pan

● Spread the egg and flour mixture in the pan and fry for 5 mins then
flip over the other side with a spatula or flat cooking spoon.

On a chopping board or kitchen work table spread your already


● fried flour and egg mixture and wait to cool down.

Scoop a spoon of the potato mixture close the centre



Then fold, after folding, any open space take in.

In a plate spread bread crumbs in another plate break one egg

● Dip the folded potato in the egg make sure to cover whole, then
roll in the bread crumb.

● Gently squeeze for the crumbs not to fall off

● Fry until golden brown on all side

Your potato recipe is ready to be served hot tea or fruit juice or


smoothie.

Meal 2: OATMEAL

Ingredients

Quick oats
1 cup of Milk
2Egg
Salt to tates
Black pepper
Normal red Pepper
1 tablespoon Olive oil
Vegatable oil (cooking
oil) 30g Cheese
Dry Parsley (Ewedu leaf)
Sesame seed (optional)

How to Prepare

● Add one cup of quick oats to a bowl


● Add in 1 cup of milk
● Soak the oat inside the milk for 5 mins
● Crack 2 eggs in a bowl and stir well

● Add salt, black pepper to the egg

● Pour 1 tablespoon of olive oil or any cooking oil of your choice and Mix
well.

● Add in 30g cheese

● Add a pinch of crushed normal pepper, a pinch of parsley and


Mix well

● Pour vegetable oil into a frying pan

● Pour the oat mixture into the pan

● Sprinkle some black sesame seed on top(optional)

● Cook for 3-5 mins on medium-low heat

● After 3-5 mins flip over and fry for another 2-3 mins

N/B: fry until crispy, top with chopped strawberry, and pineapple, and
drizzle honey. Your Oatmeal is ready to be served.

Meal 3: CORN DOG (HOTDOG) WITH BREAD

Ingreidents:

2 Sliced Bread
Sausage (hot dog)
2egg
Cheese (optionl)
Bread Crumbs
Cooking vegetable oil
Powdered milk (2 Sachet)
2 tablespoon Ground sugar

How To Prepare

● Get out sliced bread instead of dough

● Cut off the edge

● Flatten the bread on a smooth surface with a rolling pin. Let it be flat
and smooth

● Cut the sausage (hot dog) and let it be shorter than the flattened
bread

● boil the sausage (hotdog) In a cooking pot with 1 cup of water

● Break 1 egg on a plate, add salt to taste, and mix well

● Spread the mixture of the eggs at the edge of the bread

● Add your cheese (optional) and sausage

● Then roll and cover any open space

● Dip in the egg mixture, then the bread crumbs mixture

● Press in gently to avoid the crumbs falling off

● In your deep fryer- here you can use a pot and enough cooking oil-
fry your bread sausage.

● Fry until golden brown

● Bring it out and dry it on a steamer rack for like 5 minutes


● Then roll on a powdered milk and sugar mixture

It must be crispy and yummy. Can be taken with Tea.

Meal 4: GARLIC BREAD TOAST

Ingredients

30g of butter
2 big garlic cloves
1 tablespoon of Honey or sugar
Sugar
Parsley
2 slice of big bread
Cut out 30g of butter or use half sachet of butter
2 big garlic cloves
Cheese

How to Prepare

● Cut out the edge of the garlic and chop

● Add the chopped garlic to the butter

● 1 tablespoon of honey or sugar to your own taste

● Parsley (dry ewedu)

● Add together and mix well

● Get your 2 slice of big bread


● and add cheese on the first slice, to cover the whole slice then cover
with the other slice of bread

● Cut the bread into nine cubes, make two cuts horizontally, in the
middle and then make two cuts vertically.

● Spread the garlic mixture all over so that it covers the bread.

● You can sprinkle sugar

● Put on parchment paper on a baking pan, and place your toast

● Bake for 10-15 minutes with low heat until golden brown.

Your toast is ready to be served and can be served with your chilled fruit
juice or tea

Meal 5: EGG SAUCE

Ingredients

8 slices of tomato
Small fingers of ginger
1 garlic clove
Eggs
Salt
I bulb of onion
Chopped fresh pepper
Crayfish (optional)
1 Seasoning cube

How to Prepare

● In a plate cut your tomato, onions


● Mash your ginger and garlic

● Mash or chop pepper and crayfish (optional)

● Break the eggs required on a plate, season it with salt. and add a little
water

● In a frying pan pour your cooking oil and leave to heat with medium
heat- with any cooking gas, stove, etc.

● Add your salt, onion, and tomato and let it sizzle for like 3-4mins

● Add your already beaten eggs and like for a minute then stir so that it
break down which was the reason for the water added at the
mixture

● After stirring for a minute add your maggi cubes maximum of 2 and
stir

● Add your pepper either fresh pepper or dry pepper, your mashed
ginger and garlic, crayfish and any other season you love using.

● Then leave for 3-5 minutes then your egg sauce is ready to be served

You can serve this egg sauce with either boiled or fried yam, potato,
plantain, or bread and tea

Meal 6: CORN PORRIDGE

Ingredients

Corn
Milk
Salt to taste
Coconut milk (The milky water after washing out the chaff) ½
tablespoon of nutmeg
½ tablespoon spoon of cinnamon powder
Vanilla essence
Condensed milk
1 satchel of powdered milk
Sugar

How to Prepare

Pro-Tip For Preparation: Prepare the corn by washing it until the water is
clear to remove excess starch, this is best done in the night as the corn
needs to be soaked in water over the night to make the cooking easier.

In the morning prepare your coconut, remove the shell, wash then blend
with water.

After blending extract the milk and keep.

Preparation Proper:

● In a cooking pot, pour in the corn, add water, a little salt to taste, little
sugar and cinnamon leaves then cook.

● When the corn is a little softer, add the coconut milk, then allow to
cook on medium–low heat until it becomes more tender. (This may
take about 45 mins)

● Stir occasionally to prevent stickiness.


● 40 minutes later, scoop out three to four spoons of the corn, add to
a blender, then add powdered milk of your choice, also add liquid
milk to help blend. Then blend.

● Add the blended mixture to the still cooking corn porridge and mix
it well, rinse the blender with more milk to avoid waste. (The reason
for this mixture is to make the porridge more thick)

● Stir well.

● Add your vanilla essence, ½ spoon nutmeg, ½ spoon cinnamon


powder, and then stir well
● Add condense milk to your own taste, then add sugar to your own
taste and mix well.

And your corn porridge is ready to be served.

Meal 7:Egg-Sardine Sauce And Toast Bread

Ingredients

1 can of any preferred sardine of your choice


1 red bell pepper
1 bulb of onion or ½ bulb of onion depending on your
preference Salt to taste
Pepper
1 garlic clove
Small piece of ginger or ginger flavour
Slices of bread for the toast
Eggs enough for your own breakfast

How to Prepare.
● In a bowl, break your eggs then add your already chopped red bell
pepper, chopped onion, mashed ginger and garlic, salt, pepper and
mix well.

● Add your cooking oil to your frying pan and cook with medium heat.

● Fry your egg for 3mins, add the sardine, and leave it for 2 more minutes

● flip over to the other side and fry until both sides are slightly brown
then
your egg is ready.

● For toast bread if you have a toaster, toast your bread how you
normally toast bread alone.

● Don’t have a toaster? don’t worry I got you; in a frying pan grease with
little cooking oil.

● With a flat cooking spoon, press the bread and toast with low heat until
golden brown and flip over the other side, cook until golden
brown and your toasted bread with a frying pan is ready.

This can be served with Nigerian tea, smoothie or any fruit juice.

Meal 8: Potato Egg Fry

Ingredients

2 Irish potatoes
Salt
Ginger (fresh or
powdered) Garlic (fresh or
powdered) Black pepper
3 eggs
Green peas
Red bell pepper
1 bulb onion

How to Prepare

● Peel and slice the potato into slim shapes and boil with ½ spoon of
salt.

● Boil for 5 mins on high heat.

● Break 3 eggs into a bowl. Add your mashed ginger and garlic, black
pepper, green peas, red bell pepper, sliced onions, a pinch of salt and
mix well.

● Add any vegetable oil of your choice to the frying pan, when the oil
is hot, pour in your egg mixture, and cook for 2 mins.

● Add the cooked potato and cover.

● Cook with low heat for 20-25 mins then your food is ready to be
served.

Meal 9: YAM WITH EGG-FLOUR SAUCE

Ingredients

3 eggs
½ cup of flour
1 tin milk
½ tablespoon of
nutmeg Yam
Salt to taste
How to Prepare

● Break 3 eggs in a bowl.

● Add ½ cup of flour, ½ spoon of nutmeg, 1 tin milk, and mix


thoroughly.

● Cut out the quantity of yam you need and season the way you
season for frying.

● Dip the yam into the flour-egg mixture

● Add vegetable oil to a frying pan, once the oil is hot, add the sauced
yam and fry until it's a little brown or golden brown depending on
how crispy you want it.

Your food is ready to be well enjoyed 😂


N/B:This recipe can be used for potato or plantain. serve with tea or
others.

Meal 10: Three-Minute Blender Banana Pancakes

Ingredients

Small knob of butter, for frying


1 banana
1egg
1 heaped tbsp self-raising flour
½ tsp baking powder
Chopped strawberries and banana, to serve
(optional) Maple syrup, to serve (optional)
How to cook

● Melt the butter in a non-stick frying pan over low-medium heat.

● Meanwhile, add the banana, egg, flour and baking powder to a


blender and blitz for 20 seconds.

● Pour 3 little puddles straight from the blender into the frying pan.

● Cook for 1 min or until the tops start to bubble, then flip with a fork
or a flat spoon and cook for 20-30 seconds more.

● Repeat with the rest of the mixture to make three more pancakes.

● Serve the pancakes with chopped strawberries or banana and a


splash of maple syrup, or 1tablespoon of honey if you like.

Meal 11: Two-Minute Breakfast Smoothie

Ingredients

1 banana
1 tbsp porridge oats
1 cup soft fruit (whatever you have – strawberries, blueberries, and
mango all work well)
2/3 cup of milk
1 tsp honey
1 tsp vanilla extract

How To Prepare
● Put all the ingredients in a blender and whizz for 1 min until
smooth.
● Pour the banana oat smoothie into two glasses to serve.

Meal 12: EASY BANANA MUFFINS

Ingredients

1¾ of self-raising flour
1 tsp baking powder
½ tsp baking of soda
3/4 of a cup of caster sugar
5½ spoons butter, melted
1 tsp vanilla extract
2 eggs
2 large ripe bananas, mashed
8½ tsp of buttermilk (or add 1 tsp of lemon juice to milk and leave for 20
mins)

How to Prepare.

● Heat the oven to 190C/170C Fan/gas 5. Line a holed muffin mold


(cupcake mold) with paper cases.

● Sieve together the flour, baking powder, baking soda, and brown
sugar with a big pinch of salt (dry ingredient).

● In a separate bowl mix the melted butter, vanilla extract, eggs,


mashed bananas and buttermilk (wet ingredient).

● Make a well in the center of the dry ingredients and pour the wet
ingredients in.

● Mix together with a fork, being careful to over-mix.


● Scoop the mixture into the muffin cases. Then bake for 20-25 mins,
until golden brown. Cool on a wire rack.

● Serve with Hot Tea.

Meal 13: HEALTHY COOKIES

Ingredients

2 ripe bananas, mashed


I cup of porridge oats
2 tbsp ground almonds
1⁄2 tsp cinnamon
6 & 1/2 tsp of raspberries (fresh or frozen)

How To Prepare

● Heat the oven to 200C/180C fan/gas 4 and line two baking trays
with baking parchment.

● Mix the banana, oats, almonds, cinnamon, and a pinch of salt in a


bowl to make a sticky dough.

● Gently stir through the raspberries, trying not to break them up.

● Scoop up tablespoons of the mixture and roll into balls, then


place
on a baking tray and flatten with your hand.

● Bake for 15mins until the cookies feel firm around the edges and are
golden brown.

● Leave to cool. Keep in an airtight container for up to 3 days.


Meal 14: OMELETTE AND EGG ROLL

Ingredients

slices of bread
1 large egg
A handful of chopped vegetables of choice
½ seasoning cube
Pinch of curry
Pinch of thyme
1 tablespoon of vegetable oil

How To Prepare

● Turn on your cooker and heat the vegetable oil in a pan [on
low-medium heat]

● Stir fry the chopped vegetables, add the seasonings, break in the egg
and stir vigorously to scramble it in the pan.

● Immediately the egg is done, set it aside and proceed to the next
step.

● Lay your slices of bread on a chopping board and flatten them while
trimming off the edges.

● Place a smaller quantity of your egg in the bread and roll

● Cut it into two halves and do the same thing for the remaining slices.

Your delicious Omelette and Bread Rolls are ready


Meal 15: Plantain and egg mix

Ingredients

Already fried of Plantain (Cubed or sliced and Fried till golden brown)
3 Small Eggs
1 or ½ small bulb of Onion
4 carrots
1 green and red bell peppers
2 red fresh pepper
Seasoning cube
A teaspoon of black pepper
1 tablespoon of butter
A teaspoon of vegetable oil

How to Prepare

● Heat your butter and mix with vegetable oil

● Toss in your already fried plantain in the butter.

● Now, break the eggs over the plantain and sprinkle the chopped carrot,
green bell pepper, red bell pepper, onion, chopped red fresh
pepper, and cheese.

● Add your salt, pepper, and your seasoning cubes all over the eggs and
plantains.

● Reduce the heat a bit and cover your cooking pan until the food is
finally done.

Serve hot.
Meal 16:Black Eyed Peas Fritters Or Beans Cake (Akara)
Beans Pudding (Moin Mion) And Pap Or Custard

Ingredients

Beans
Onion
Pepper
Tomatoes
Ginger
Garlic
Crayfish
Seasoning cubes
Red oil (optinal)
Cooking oil

Procedure And Little Advice

This is the most common food in Nigeria for both the poor and the rich.

As a Nigerian, we prefer to buy it than make it at home because of the


time consuming process of the preparation, especially the washing of
beans.

I will write down the easiest way to wash the beans that even with a lazy
person it would not be more than 10- 15 minutes, for a fast person 5-8
minutes.

You get your beans after removing the dirty particles and stones, DON’T
SOAK IT IN WATER,

You simple add small amount of water that it would not cover the beans
then start washing you will see that in less than two minutes the body
peels off, once its whiter and the beans peels are more prominent you
pour enough water to wash out the bean peels.
Continue this until all the peels are out then your beans are ready for
blending.

For beans pudding(moin moi): , blend with pepper, tomato, ginger and
garlic crayfish and 1 bulb of onions.

For beans cake; blend with pepper and onions

Once your beans is blended well;

For beans cake: add salt, small slice of onion, chopped fresh pepper add
maggi if you want, then scoop little by little into the hot boiling oil in a
deep fryer fry your beans cake.

For bean pudding, mix with either groundnut oil or red oil or both, a small
slice of onion then salt, maggi or more pepper (if you like, totally optional)
then scoop into a plate.

Garnish with already boiled egg or well-seasoned boiled fish, then cook
for 45- 55 minutes. Your beans pudding is ready to be served

Once the bean cake and beans pudding is ready serve with either pap or
custard
Some Special Recipes to Try for the Family.

RICE SALAD RECIPE

Ingredients

1 cup cooking oil or canola oil


1 teaspoon of salt
½ teaspoon freshly ground black pepper
1 teaspoon sugar
1 teaspoon sesame oil
4 cups cooked rice, chilled
1 carrot, diced
½ cup snow peas (the green peas we buy that have not been removed
from it bud), chopped
¼ cup rice vinegar can be substituted apple cider vinegar
1 stalk celery, diced
½ large bell pepper, red or yellow, diced
3 spring onions, chopped
½ cup corn kernels,
2 tablespoons chopped fresh parsley, for garnish.

How to Prepare

● In a small mixing bowl, combine the oil, salt, black pepper, sugar,
and sesame oil. Mix until the sugar dissolves.

● Pour the mixture on the chilled cooked rice in a large mixing bowl.

● Mix gently to coat the rice, then set the bowl aside.
● Steam the diced carrots, Green peas, and corn if desired, for 1 to 2
minutes, until they just start to turn tender.

● Plunge them into an ice bath to flash chill them and halt the cooking
process, drain them, then stir the vegetables into the rice.

● Add the remaining ingredients, from the rice vinegar through the
chopped spring onions, and toss to distribute the vegetables
throughout the rice.

● Then add your parsley (Ewedu Leaf) (optional). Your rice salad is
ready to be served.

● Add minced garlic or ginger, a dab of chili paste, or a more dry


pepper to taste, if you want spicy food.

You can also add well seasoned meat to this mixture if you want to.

Quick and Easy Vegetable Fried Rice With Spinach

Ingredients

3 cloves garlic (minced)


3 tablespoons olive oil
2 cups cooked rice
1 tomato (chopped)
1 large handful spinach (chopped)
1 large handful green beans (or other vegetables of your choice,
chopped) ¼ cup soy sauce
1 tablespoon sesame oil
⅓ teaspoon salt
½ lime (juiced)
How to Prepare:
● Stir fry the garlic in olive oil for 1 to 2 minutes.

● Add cooked rice and stir to combine. Add, 1 tomato (chopped), 1 large
handful of spinach (chopped), 1 large handful of green beans (or
other vegetables of your choice, chopped), ¼ cup soy sauce, 1
tablespoon sesame oil.

● Allow it to cook for 8 to 10 minutes, stirring frequently.

● Remove from heat and stir in the salt and lime juice (optional).

Serve and enjoy!

SIMPLE CHICKEN SALAD WITH GRAPES

Ingredients

1 ½ cups chicken, cut into ½ -inch cubes or shredded


N500 finely chopped cabbage.
N200 spring onions, chopped.
3-4 tablespoons mayonnaise, adjust as needed for desired
consistency Salt, to taste
Freshly ground black pepper, to taste
12 red or green seedless grapes, halved
1 dash curry powder, or to taste
Lettuce, for serving, optional

How to prepare
● Combine the well-seasoned, cooked, and diced or shredded chicken,
chopped cabbage, and spring onion slices with 3 tablespoons of
mayonnaise in a large bowl.

● Mix thoroughly to evenly distribute the ingredients.

● Add more mayonnaise, if desired, and season with salt and freshly
ground black pepper.

● Add the halved grapes and curry powder, tomatoes, and nuts if using.

● Mix gently to combine.

● Moundthesaladongreensorlettuceleavesforalightanddelicious
lunch or dinner salad.

And Serve.
