Manager’s Shift Change Checklist Date:______________

Initials To be performed throughout shift and completed 1 hour before shift change.
As lunch traffic slows, begin to consolidate guests and close sections.
Check each station’s side work and cut unnecessary staff.
a) stations are clean and stocked according to opening check list;
b) look at and feel tables, chairs and condiment containers;
c) tableware is clean and spot-free;
d) drink, dessert, soup and salad stations are stocked and clean;
e) garbage liners are changed;
f) guest tickets are closed;
g) run register reports;
h) verify employee drops and collect banks.
Make sure bussers have cleaned perimeter, floors, bathrooms, entrance, foyer and
patios and realigned tables and chairs.
Sanitizer and mop water should be fresh.
Cardboard boxes should be broken down and thrown away.
Delivery and dumpster areas should be clean.
Note any relevant information in the manager’s communication log and follow up on
unfinished items.
Make sure liquor count and breakage report is completed.
Fill out order lists for liquor and supplies.
Check deliveries against packing slips and shelf the products.
Conduct interviews and follow-up calls.
Make sure employee files are complete.
Complete shift reports.
Conduct a brief PM shift meeting with kitchen manager and front-of-the house staff:
a) private parties, seating chart and server sections;
b) menu specials and “86” list;
c) local events that could impact business;
d) issue shift banks;
e) customer service incentives.
Do a final walk-through before shift change.
