RESTAURANT STYLE PREMIX AND SUBZIZ

1. WHITE GRAVY MIX:


Ingredients:
2 tbsp cashew, 2 tsp watermelon seeds, 2 tsp white til, 1 tsp chaat masala, 1 tbsp onion
powder, 1 tsp salt, 1 tsp corn flour, 5 tbsp milk powder, 1 tsp kasoori methi, '2 tsp garlic
powder, 3 tsp sugar, 1 tsp ghee or oil, 7 spices (2 cloves, 2 dalchini, 2 chakriful, 1 badi
elachi, 4-5 pepper corn, 3 to 4 bay leaves, 1 small piece javintri)
Method:
• Roast cashew, watermelon seeds & til for 2 minutes, cool & grind.
• Now add milk powder, cornflour, chaat masala, kasoori methi, salt, sugar & keep
aside.
• In a pan add oil roast all the spices & mix in the mixture & make packet.

Vegetables can be made:

NAVRATNA KORMA:
1. In pan add butter and oil ,
2. In white gravy mix(above mentioned) add 2 cups milk and add to the pan
3. Once it is thick add blanched and 1 cup chopped vegetable(beans, carrot,peas)

METHI MALAI MATAR,


1. In pan add butter and oil ,
2. In white gravy mix(above mentioned) add 2 cups milk and add to the pan
3. Once it is thick add kasuri methi, ½ cup green peas

CORN PEAS,
1. In pan add butter and oil ,
2. In white gravy mix(above mentioned) add 2 cups milk and add to the pan
3. Once it is thick add boiled ½ cup sweet corn, ½ cup green peas and cheese

PANEER KAJU CURRY


1. In pan add butter and oil ,
2. In white gravy mix(above mentioned) add 2 cups milk and add to the pan
3. Once it is thick add ½ cup paneer and ½ cup fried kaju

PINEAPPLE PANEER VEGETABLES

1. In pan add butter and oil ,


2. In white gravy mix(above mentioned) add 2 cups milk and add to the pan
3. Once it is thick add paneer, 1/2 cup blanched vegetables (beans.carrot, peas, potato), 1/2
onion (chopped), 1/4cup pineapple (tinned)

2. GOLDEN GRAVY MIX:


Ingredients
2 tbsp cashew, 2 tsp melon seeds, 2 tsp white til, 1 tsp chaat masala, 1 tbsp onion powder,
1/2 tsp haldi powder, 1 tsp salt, 5 tbsp milk powder, 1 tsp kasoori methi, 1/2 tsp garlic
powder, 1 tbsp red chilli powder, 1 tsp sugar, 1 tsp garam masala kitchenking) 7 spices, 1
tsp corn flour.
Method:
• Roast cashew, watermelon seeds & til for 2 minutes, cool & grind.
• Now add milk powder, corn flour, chili powder, sugar, garam masala, garlic powder,
kasoori methi & keep aside.
• In a pan add oil roast all the spices & mix in the mixture & make packet.

Vegetables can be made:


GARDEN SURPRISE,
1. In pan add butter and oil ,
2. In golden gravy mix(above mentioned) add 1 cup milk & 1 cup water mix it & add to the pan
3. Once it is thick 1 cup mixed balanched vegetables (beans, carrot, peas, potato), 1 onion
(chopped) (lengthwise) & 2 tbsp curd.

DUM ALOO,
1. In pan add butter and oil ,
2. In golden gravy mix(above mentioned) add 1 cup milk & 1 cup water mix it & add to the pan
3. Once it is thick add deep fried baby potatoes

VEG KORMA,
1. In pan add butter and oil ,
2. In golden mix(above mentioned) add add 1 cup milk & 1 cup water mix it & add to the pan
3. Once it is thick add blanched and 1 cup chopped vegetable(beans, carrot,peas)

SHAHI PANEER
1. In pan add butter and oil ,
2. In golden mix(above mentioned) add add 1 cup milk & 1 cup water mix it & add to the pan
3. Once it is thick add big cubes of paneer

3.RED GRAVY MIX/ ORANGE GRAVY MIX:


Ingredients
2 tbsp cashew, 2 tsp melon seeds, 2 tsp white til, 1 tsp chaat masala, 1 tbsp onion powder,
1/2 tsp orange red colour, 1 tsp salt, 5 tbsp milk powder, 1 tsp kasoori methi, 1/2 tsp garlic
powder, 1 tsp corn flour, 1 tbsp red chili powder, 1 tbsp sugar, 1 tsp tandoori masala, 1 tsp
ghee, 7 spices, 1 tsp tomato powder.

Method:
• Roast cashew, watermelon seeds & til for 2 minutes, cool & grind.
• Now add all the remaining ingredients.
• In a pan add oil roast all the spices & mix in the mixture & make packet.

Vegetables can be made:

PANEER MAKHAANWALA,
1. In pan add butter and oil ,
2. In red mix(above mentioned) add add 1 cup milk & 1 cup water mix it & add to the pan
3. Once it is thick add paneer, little sugar and extra slice of butter

KOLHAPURI,
1. In pan add butter and oil , 3 red chillies
2. In red mix(above mentioned) add add 1 cup milk & 1 cup water mix it & add to the pan
3. Once it is thick add paneer, 1/2 cup blanched vegetables (beans.carrot, peas)

JALFERZI,
1. In pan add butter and oil ,
2. In red mix(above mentioned) add add 1 cup milk & 1 cup water mix it & add to the pan
3. Once it is thick add long cut paneer, 1/2 cup blanched longcut vegetables (beans.carrot,
peas)

PANEER DO PYASA
1. In pan add butter and oil ,
2. In red mix(above mentioned) add add 1 cup milk & 1 cup water mix it & add to the pan
3. Once it is thick add fried paneer and fried onion

4.GREEN GRAVY MIX:


Ingredients
2 tbsp cashew, 2 tsp watermelon seeds, 2 tsp white til, 1 tsp chaat masala, 1 tbsp onion
powder, 1 tsp salt, 1 tsp corn flour, 5 tbsp milk powder, 1 tsp kasoori methi, 1/2 tsp garlic
powder, 1 tsp sugar, 1 tsp ghee or oil, 7 spices ,pinch of green food colour, 1 tsp garam
masala
Method:
• Roast cashew, watermelon seeds & til for 2 minutes, cool & grind.
• Now add all the remaining ingredients.
• In a pan add oil roast all the spices & mix in the mixture & make packet.

Vegetables can be made:


EXOTIC PALAK CURRY,
1. In pan add butter and oil , 1/2 cup onions and 1 cup palak puree
2. In green gravy mix(above mentioned) add add 2 cup water mix it & add to the pan
3. Once it is thick add bell pepper (Chopped lengthwise), 1/2 cup baby corn, broccoli
(blanched), 1/2 cup paneer
PALAK PANEER,
1. In pan add butter and oil , 1/2 cup onions and 1 cup palak puree
2. In green gravy mix(above mentioned) add add 2 cup water mix it & add to the pan
3. Once it is thick add fried paneer cubes

VEG. HYDRABADI
1. In pan add butter and oil , 1/2 cup onions and 1 cup palak puree
2. In green gravy mix(above mentioned) add add 2 cup water mix it & add to the pan 3. Once
it is thick add 1/2 cup blanched vegetables (beans.carrot, peas) and chaat masala 4.
5.MUGHLAI GRAVY MIX:
Ingredients
2 tbsp almonds , 2 tsp melonseeds, 2 tsp white til, 1 tsp chaat masala, 1 tbsp onion
powder, 1/2 tsp brown colour, 1 tsp salt, 5 tbsp milk powder, 1 tsp kasoori methi, 1/2 tsp
garlic powder, 1 tsp corn flour, 1 tbsp red chili powder, 1 tbsp sugar, 1 tsp tandoori masala,
1 tsp ghee, 7 spices, 1 tsp tomato powder. Method:
• Roast cashew, watermelon seeds & til for 2 minutes, cool & grind.
• Now add all the remaining ingredients.
• In a pan add oil roast all the spices & mix in the mixture & make packet.

Vegetables can be made:


KADHAI PANEER,
1. In pan add butter and oil , diced onion and capsicum
2. In mughlai gravy mix(above mentioned) add add 2 cup milk mix it & add to the pan
3. Once it is thick add paneer

PINDI CHOLE,
1. In pan add butter and oil ,
2. In mughlai gravy mix(above mentioned) add add 2 cup milk mix it & add to the pan 3.
Once it is thick add boiled chole and amchur powder

RAJMA
1. In pan add butter and oil ,
2. In mughlai gravy mix(above mentioned) add add 2 cup milk mix it & add to the pan
3. Once it is thick add boiled rajma

MUGHLAI SHAHI PANEER KORMA:


1. In pan add butter and oil ,
2. In mughlai gravy mix(above mentioned) add add 2 cup milk mix it & add to the pan
3. Once it is thick add fried paneer

6.JAIN GRAVY MIX:


Don’t add garlic & onion powder & instead of tandoori masala add garam masala.
7.NAAN MIX:
Ingredients
1 cup maida, 2 tsp salt, 1 tsp powder sugar, 1 tbsp milk powder, 1 tsp baking powder
Method:
Add luke warm water & knead a soft dough finally add 1 tsp oil & knead properly & keep aside for
15 minutes & make as shown

8.STUFF PANEER ONION KULCHA:


Stuff paneer, onion, coriander, chili rings & pudina & make stuff kulcha.

9.CHATPATA TOMATO SOUP MIX:


2 tsp tomato powder, 1 tsp corn flour, 1/8 chaat-masala, pinch salt, 3/4 cup water

10.INSTANT DAL MAKHANI MIX :


Ingredients
1 tbsp onion powder, 1 tsp salt, ‘2 tsp garlic powder, 1/2 tsp ginger powder, 3 tbsp milk
powder, 1 tsp chili powder, '1 tsp Sugar, 1 tsp oil, 1 tsp kasoori methi, 7 spice mix
Method:Same as red gravy.

For Dal Makhani:


• Mix the packet of instant dal makhani in 1 cup water.
• Heat 1 tbsp butter & 1 tbsp ghee in a pan.
• Add 1 chopped tomato & sauté for 2-3 'minutes,
• Add gravy & sauté for 2-3 minutes, then add 1 cup of boiled akha udad, rajma &
tuvar daal. (3 tbsp akha udad daal, 3 tbsp rajma, 3 tbsp tuvar daal).

11.BIRYANI MIX:
Ingredients
1/2 tsp garlic powder, 1 tsp salt, 1 tsp sugar, 1 tbsp onion powder, 1/2 tsp ginger powder,
2 tsp chili powder, 1 tsp oil, 1 tbsp biryani masala, 2 tbsp milk powder,-1 tsp dry mint
leaves, 1/2 tsp cumin seeds, 7 spice'(whole) Method:
• 250 gms basmati rice (cooked) ,
• 1 cup mixed vegetable blanched (carrot, beans, cauliflower, peas etc.) • Mix the
instant powder in 200 ml butter milk & cook for 5 minutes.
• Grease the pan with butter, now arrange layer of rice, vegetables & gravy.
• Pour 2spoon milk, 2 tbsp ghee & cook for 2 minutes on a slow flame, garnish with
fried cashew, badam & raisine.
