SPROUTS SALAD
Serves: 2
Ingredients
• 1 cup green gram (moong) sprouts
• ½ cup chopped cucumber
• ½ cup chopped green capsicum
• ½ cup grated red cabbage
• ½ cup grated green cabbage
• ½ cup chopped green le uce
• 2 tbsp date paste (recipe on SHARAN website - h ps://sharan-
india.org/recipes/date-paste-raw/)
• 2 tbsp green chutney (recipe on SHARAN website - h ps://sharan-
india.org/recipes/coriander-mint-chutney/)
• ½ tsp unre ned salt
• 1 tsp black salt (kala namak)
For the Garnish (op onal)
• 2 tbsp nely chopped fresh coriander leaves
• 2 tbsp grated fresh coconut / roasted peanuts

Method
1. Mix all the ingredients together in a bowl.
2. Garnish with fresh coriander and grated fresh coconut or roasted
peanuts (op onal).

Varia ons/Subs tu ons
Steamed potatoes or corn may be added. You may use any vegetables
of your choice. You could also play around using di erent sprouts or
mixed sprouts. Instead of date paste, you could use date-tamarind
chutney (h ps://sharan-india.org/recipes/date-tamarind-chutney/).
