picked Bal Harbour for their first outposts outside of New York, and in 2009,

Santiago Rubino. Following in the footsteps of
famed artist Maxfield Parrish—whose mural

self-taught, Rubino—who is represented by
the locally based Spinello Projects and has

created a triptych, “Eyes of the Stars.” A

One of the world’s most famous chefs, Jean-Georges Vongerichten
—of Spice Market and the new J&G Grill at The St. Regis Bal
Harbour Resort—is known for his innovative flair for mixing the
cuisines of Asia and France to a profoundly wonderful effect. His
newest venture promises to embrace the flavors of South Florida, Asia
and Latin America and then bring it all back to Bal Harbour.
Bal Harbour: Are there dishes and influences from your other
restaurants that you are planning to incorporate at the St. Regis
Bal Harbour Resort?
Jean-Georges Vongerichten: I always have inspirational direction for
the menu based on location but then find we edit based on finds in
the local markets. Local ingredients and product availability really
dictate the final menu.
BH: You’re known for your fondness for chilis and acid, working
with citrus and vinegars. What tropical fruits from South Florida
are you looking forward to working with at J&G Grill?
JGV: I am looking forward to working with citrus fruits like
oranges, Meyer lemons, key limes as well as Florida tomatoes.
BH: What local Florida fish do you look forward to working with?
JGV: Fish like pompano, grouper, mahi mahi, stone crab and
whatever is running seasonally. We like to work with local fishermen.
BH: What do you think of the increasing sophistication of the
Miami culinary scene? How is Miami different than, say, New York? With Art Basel,
JGV: Miami and New York are filled with restaurants—there are South Beach Wine
many classic, renowned restaurants and chefs as well as new,
emerging, young talent. What is unique about Miami is the Latin & Food Festival and
