The cronut: a global phenomenon that started small
You may not have heard of Dominque Ansel, but chances are that you’ve heard of, or possibly even
tried, the foodstuff that he created at his now famous bakery in New York City (NYC). Described as a
“circle of fried deliciousness,” the “cronut” is a crazy mix of half donut and half croissant, filled with a
range of flavored creams—salted caramel, rose vanilla, and white peach, to name a few.
The cronut was first sold on Mother’s Day in 2013. Dominque and his team had wanted to create a donut
dessert but couldn’t find a suitable recipe. Dominique began working on a new type of dough that,
when fried, looked like a croissant on the inside but had the “bready” flavor of a donut. After several
unsuccessful attempts, they perfected the recipe. On the first day, they made about 40 cronuts.
By chance, a food journalist bought one and in a matter of hours the cronut had gone viral. The next
day people began to wait in line outside the bakery for the chance to try one. By day 3, 150 people
had lined up.
Six years on and Dominque is still making and selling cronuts in NYC but has also opened bakeries in
Tokyo and London off the back of the global success of his invention (worth noting that he “patented”
the cronut so that he is listed as being the “official creator” of it). The bakery restricts daily output to
around 500 to 600, but people still wait in line every morning at 8 a.m., and by midday the cronuts have
sold out. Each month a new cronut flavor is launched, and loyal customers come back to try the new
flavor. No flavor is repeated. In an interview with Insider magazine, Dominque said that the reason why
he limits the daily output is just because he wants to maintain the quality. He doesn’t want his creation
to kill his creativity.
Cronuts may have become a global food phenomenon, but if you really want to try the original, you’ll
need to head to NYC to do it.
