Use standard Measuring Devices/Instruments
Scale-Most recipe ingredients are measured by weight so accurate scale are very
important.
• Weighing scale-is a measuring instrument for determining the weight or mass of an object.
• Digital scale-A digital is a measurement device used to measure the weight or mass of an object or
substances.
• Dietetic Scale-A kitchen device used to measure the weight of ingredients and other food.
Volume measure – use for liquid, have lips for easy
easy pouring.
Measuring cup-are available in 1, ½, ⅓, ¼, and ⅛ cup sizes. They can be used for both liquid and
dry measurements.
Measuring spoons – Is a spoon used to measure an amount of an ingredient, either liquid or dry,
when cooking.
Ladles- is a type of serving spoon used for soup, stew, or other foods. Ladle has long handle
terminating in a deep bowl.
TYPES OF THERMOMETER
• Thermocouple- A thermocouple measures temperature at the junction of two fine wires located in the
tip of the probe.
• Thermistor- style food thermometers use a resistor (a ceramic semiconductor bonded in the tip with
temperature-sensitive epoxy)to measure temperature.
Oven Cord Thermometer- this food thermometer allows the cook to check the temperature of food in the oven
without opening the oven door.
Thermometer fork combination- this utensils combine a cooking fork with a food thermometer. A temperature-
sensing device is embedded in one of the tines of the fork.
• Bimetallic–coil Thermometer – these thermometer contain a coil in the probe made of two different metals that
are bonded together. The two metals have different rates of expansion.
• Single-use Temperature Indicators- one of the most recent development in the retail food market is the emergence of
disposable temperature indicators.
Pop-Up Timers-commonly used in turkeys and roasting chicken since 1965, the "pop-up" temperature device is
constructed from a food- approved nylon.
