of a concentrate that would yield single-strength juice after diluting one part of the
concentrate with three parts of water? Assume densities are constant and are equal to the
density of water.

Solids in apple juice = 10% diluting in 1 part concentrate: 3 parts
Density of apple juice = density of water water

REOUIRED:
SOLUTION:
x(100) = one part concentrate
1(900)- three parts water

1000mL Apple Juice 1000mLSolutionx=solid


10% solid Dilution
90% water

Amount of Solid = 10% of 1000mL


Amount of Solid = 100 mL
Amount of water = 1000mL — 100mL = 900mL

Let the solid content of concentrate be x

x(100) + 3x(900) = 1000


100x + 2700x = 1000
2800x = 1000

x = 0.3571 mL
x= 35.71%

ANSWER:

The Solid content of concentrate after diluting in one part concentrate with three parts
water is 35.71%.

2. If 100 kg of raw sugar containing 95% sucrose, 3% water, and 2%


soluble non crystalline inert solids is dissolved in 30 kg of hot water and cooled to 20°C,
calculate:
a. The amount of sucrose (in kg) that remains in solution.
b. The amount of crystalline sucrose.

c. The purity of the sucrose (in %) obtained after centrifugation and


dehydration to 0% moisture. The solid phase contained 20% water after separation from
the liquid phase in the centrifuge. A saturated solution of sucrose at 20°C contains 67%
sucrose (w/w).

GIVEN: REQUIRED:
Mass of raw sugar = 100kg (a) amount of sucrose
Sucrose 95% = 95kg (b) amount of crystalline sucrose
Water 3% = 3kg (c) purity of sucrose
Non-crystalline inert 2% = 2kg
Hot water = 30kg
Temperature = 20C
Solution (s) = 67% sucrose
