1. KOKI- BEAN CAKE

-peas are smashed, wrapped in banana leaves and steamed


-derives its characteristics bright red color and flavor from red palm oil as well as other condiments such
as crayfish, pieces of fish, and chili peppers

2. COUSCOUS ROYALE

-a staple dish enjoyed, in Tunisia, North Africa


-consists of steamed semolina

-along to Tunisia’s eastern Mediterranean coast is a broad coastal plain known as the Tunisian Sahel, the
area is famous for its Olive cultivation
-most popular tourist destinations in North Africa, it offers spectacular beaches and several diverse cities
with opportunities for shopping and dining
3. CHICKEN MUAMBA

-a spicy dish, oily brew consisting of palm butter, garlic, chilis, and okra,

-a country on the western coast of Southern Africa
-it comes from the word Ngola which was an iron object that symbolized kingship among Mbundu and
Lunda people
-a country rich in natural resources including gems, metals, and petroleum

4. EGUSI SOUP(Melon Seed Stew) with Fufu

-serve spinach leaves, assortment of meats, fish, spices, oils and other condiments
-serves well with rice, potatoes, pounded yam, or well-made fufu balls

5. Pap en Vleis/Shisa Nyama

-renowned for its varied topography, great natural beauty, and cultural diversity

6. NYAMA NA IRIO

-comprises of mashed-up patotoes, peas, beans, corn onion, and served with spiced roasted meat
backed by alluring spices and condiments

-country in East Africa famed for its scenic landscapes and vast wildlife preserves
-capital city is Nairobi a sprawling city
-rich in tradition of oral and written literature including fables
7. KOSHARI

-a healthy vegetarian serving of rice, lentils, macaroni, garlic, and chickpeas brought together by a spicy
tomato sauce and topped off with fried onion

-located in Northeastern corner of Africa
-the Egypt’s heartland is the Nile River
-famous for its ancient civilization and some of the world’s most famous monuments including Giza
pyramids, the Great Sphinx and the ancient temples of Luxor dating back thousands of years

8. ALLOCO

-consist of Ivorian fried plantain served with chili pepper, onions or egg and tasty tomato sauce

-also known as Cote d’Ivoire
-with legacy of beach resorts, rainforests, and a French colonial legacy
-known for its religious and ethnic harmony
