INTRODUCTION

Carbohydrates are essential in foods as an energy source as starch is the source of human calories, a

flavoring as simple sugars is a usual sweet and as a functional ingredients like sucrose allows ice cream to be

soft in the freezer or gums thickens a low fat salad dressing. Carbohydrates are types of macronutrient found

in many foods and beverages. Most carbohydrates are naturally occurring in plant based food, such as grains.

Food manufactures also add carbohydrates to processed foods in the form of starch or added sugar.

In this experiment, carbohydrates will undergo to the different kinds of solution to test and to know what

give the positive reactor and a negative reactor between the added solutions and gained knowledge about the

structures of carbohydrates, also to know the differences between monosaccharides such as glucose, fructose,

xylose and galactose and disaccharides such as lactose, maltose, and starch. We also test the H20 and starch

if our assumptions can be corrected by this experiment.

CONCLUSION

It is concluded that the experiment was successful in using all the test such as benedict test, iodine

test, molisch test, seliwanoff test, bial’s test, barfoed’s test and mucic test. Benedict test is used to detect the

presence of reducing sugar such as glucose, fructose and lactose. All monosaccharides are reducing sugar,

they all have a free reactive carbonyl group. Some disaccharides have expose carbonyl group and are also

reducing sugar. Lactose and maltose which is disaccharides also called reducing sugar as it exposes the

carbonyl group. Other disaccharides such as sucrose and starch are non-reducing sugar and will not react with

Benedict test. Next, we use iodine test to test for the presence of starch. Starch is a type of polysaccharides

carbohydrates which is made up of amylose and amylopectin. Starch give positive result in iodine test as the

rest gives an negative result because iodine is only for the test of starch. Molisch test gives an positive results

except for H20. H20 is gives a negative reactor to all carbohydrates because the bond between the oxygen

and hydrogen atoms in sugar gives the oxygen a slight negative charge and the hydrogen a slight positive

charge. The polar water molecules attract the negative and positive areas on the polar molecules which make

it dissolve in the water. Barfoed’s test give an positive to all the monosaccharides sugars such as glucose,

fructose, xylose and galactose because it is only test for monosaccharides. Seliwanoff test is a test only for

ketoses that is result for a positive to the fructose and sucrose, the rest gives a negative results. Mucic test is a

test for only galactose that means galactose is only gives an positive and the rest is negative and last is bial’s

test is for pentoses that means the only example of pentoses is xylose or arabinose. This experiments was

construct to see how the following carbohydrates react with the other substances and solutions that gives us

have more knowledge and to be aware of how many sugars in our daily lives do we digest.
