Introduction
This module describes food and cooking equipment, explaining baking and culinary principles, cooking
techniques, provides recipes and using these principles and techniques. Like the sculptor, painter or fine wood maker,
the pastry and bakeshop artist uses a wide variety of tools to help decorate cakes and pastries. Many these tools
appear in photographs throughout this lesson. Processing equipment includes both electrical and nonelectrical
mechanical devices used to chop, puree, slice, grind or mix food. Before using any such equipment, be sure to review
its operating procedures and ask for assistance.

ABSTRACTION
Decorating and Finishing Tools
It is important to decorate finish baked products because it increases the possibility that the customer will engage to
buy the product because it is eye-catching. Decorating can make the product attractive and appealing for the buyer's
eyes especially if the decoration is good, clean, no scratch, new and beautiful. Decorating products expresses the
talent and creativity of the makers of the product. Some of the customers buy products just by judging the looks o
decoration of the product just add the flavor to make it perfect, so it is really important to decorate.
Cake Turntable
A cake turntable is not just for cakes. You can also use it to hold pieces of art that you
want to paint. In particular, they are great for painting stripes onto pottery. These
turntables are also good for hand moulding and sculpting with clay.
Cake Pans
A baking pan commonly found in every kitchen. Cake pans can be round, square, or
rectangular and are available in several sizes. Probably the most popular is the 9 x 13
x 2 inch rectangular cake pan that is used to bake cakes, bars, and savory dishes,
such as lasagna.
Flan Ring
Flan Rings are an ideal tool for making flans, quiches and treacle tarts and come with a
small Swing tag booklet with instructions for lining the flan ring, which also includes
easy shortbread recipe.
Tartlet Pans
One of the most valuable uses of the tart pan is being able to bake tart shells ahead
of time, and later fill them with pastry creams, curds and fruits for tarts or to ladle in
savoury custards or quiche fillings for appetizers and entrees.

Cannoli Forms
It is an Italian pastry consisting of tube-shaped shells of fried pastry dough,
filled with a sweet, creamy filling usually containing ricotta—a staple of
Sicilian cuisine. In mainland Italy, they are commonly known as cannoli
Sicilians.
Off-set Spatula
An offset spatula has a long narrow flexible metal blade with a rounded end and either a
plastic or wooden handle to hold on to. The long blade makes it easy to smooth cake
batter into the corners of a baking pan and loosen the cake from the sides of the pan
after it bakes.
Rectangular Tartlets Pan
A sheet pan, baking tray or baking sheet is a flat, rectangular metal pan used in an oven.
It is often used for baking bread rolls, pastries and flat products such as cookies, sheet
cakes, Swiss rolls and pizzas.
Bread Lame (blade for scoring bread)
Scoring is slashing the dough with a blade or a sharp knife to allow it to expand during
baking. The purpose is primarily to control the direction in which the bread will expand
during “oven spring.” Easier said then done!
Flower Nail Lifter
A Flower Lifter is used in cake decorating to remove prepared buttercream flowers from a
piping nail and placement on a decorated cake.

Piping Bag and Tips
A pastry bag (or piping bag) is an often cone- or triangular-shaped, hand-held bag made from
different pliable and food safe materials that is used to pipe semi-solid foods by pressing them
through a narrow opening at one end, fitted with or without a piping tip. It is used for many
purposes including cake decoration.
Metal Spatula
A spatulas and micro spatulas are small stainless steel utensils, used for scraping,
transferring, or applying powders and paste like chemicals or treatments. Many spatula
brands are also resistant to acids, bases, heat, and solvents, which make them ideal for
use with a wide range of compound.
Dough Cutter
Dough cutters are used to cut dough into various shapes. They are also used to scrape
dough from rolling boards or working surfaces. Always clean the blades with water and
wipe them dry before storing them to avoid rust formation and contamination.
Rolling Pin
A rolling pin is a cylindrical food preparation utensil used to shape and flatten
dough. Two styles of rolling pin are found: rollers and rods. Roller types
consist of a thick cylinder with small handles at each end; rod type rolling pins
are usually thin tapered batons.
Spring form Pan
This pan is used to bake dishes that cannot be easily inverted for removal from the pan.
Some of the most common recipes to call for springform pans are cheesecakes and
tortes.

Copper Sugar Pot
This copper sugar pot is used to melt sugar to make caramels or caramel sauces and
candies.
Nest of Round Cutters (Biscuit Cutters)
It is a tool to cut out cookie/biscuit dough in a particular shape. They are often used for
seasonal occasions when well-known decorative shapes are desired or for large batches
of cookies where simplicity and uniformity are required.

A cake comb is a tool used in cake decorating. The teeth of a cake comb are used to make
designs in the frosting of a cake or other confection that has frosting. Cake combs usually
are made out of stainless steel but sometimes are made from plastic.
Processing Equipment
Includes both electrical and nonelectrical mechanical devices used to chop, puree, slice and grind or mix
foods. Before using any such equipment, be sure to review its operating procedures and ask for assistance if
necessary. Always turn the equipment off and disconnect the power before disassembling, cleaning and disconnect the

Blender
A blender (sometimes called a liquidiser in British English) is a kitchen and
laboratory appliance used to mix, purée, or emulsify food and other substances. A
stationary blender consists of a blender container with a rotating metal blade at the
bottom, powered by an electric motor that is in the base.
Immersion Blender
An immersion blender, also known as stick blender, mini blender, hand blender or wand
blender, is a kitchen blade grinder used to blend ingredients or purée food in the
container in which they are being prepared.
Electric Mixer
A mixer, depending on the type also called a hand mixer or stand mixer, is a kitchen

tasks of stirring, whisking or beating.

requirements of the bakeshop are somewhat different. More often than not, pastries, breads, desserts and common

Convention Oven
Use the convection setting on your convection oven for most cooking, roasting and baking
needs, including meats, vegetables, casseroles, cookies and pies. With convection
roasting, meats like chicken and turkey can get a delicious crispy outer layer, while staying
