BAKING TOOLS AND EQUIPMENT AND THEIR USES
1. Baking wares – are made of glass or metal containers used for baking purposes
in various sizes and shapes.

OVENS
Ovens an enclosed space used for baking purposes,
usually by hot air.
Several kinds of ovens are used in baking.
A. DECK OVENS is also called stack oven. Bread s are baked
directly on the floor of the oven and not in pans and equipped
with steam injector

1. RACK OVEN is a large oven with full sheet of pans that
can be willed for baking, it also called an industrial oven.

2. MECHANICAL OVEN –most common types are revolving oven
like microwave oven where food is in motion while it bakes.
It can be equipped with steam injector.

3. CONVECTION OVEN It circulates the air and distributes the heat
rapidly throughout the interior, like turbo broiler.

Dutch oven – old-type oven, it is usually made of cast iron,
