Chain Management
Food Goblin Supermarkets use both cashiers and baggers to serve customers at check out. During the first 5 hours of each
workday (Monday-Friday), 7 cashiers and 4 baggers serve approximately 32 customers per hour. A cashier and a bagger
who require approximately 6 minutes at checkout and 3 minutes at bagging serve each customer.
a. Find the utilization of both cashiers and baggers.
Utilization is the degree to which a resource such as equipment, space, or the workforce is currently being used and is
measured as the ratio of average output rate to maximum capacity (expressed as a percent).
Average output rate
Utilization = 100%
Maximum capacity
The average output rate and the capacity must be measured in the same terms - that is, time, customers, units, or dollars.
Here, the maximum capacity is determined by the availability of cashiers and baggers.
First, find the availability of cashiers.
AvailabilityCashier = 7 persons 5 days week 5 hours day
= 175 hours per week
Find the average output rate for cashier.
Average output rateCashier = 32 customers 6 minutes 60 minutes per hour 5 hours per day 5 days per week
= 80.00 hours per week
Use the obtained values to find the utilization of cashiers.
80.00
UtilizationCashier = 100%
175
= 45.7%
Now find the availability of baggers.
AvailabilityBagger = 4 persons 5 days week 5 hours day
= 100 hours per week
Find the average output rate for bagger.
Average outputBagger = 32 customers 3 minutes 60 minutes per hour 5 hours per day 5 days per week
= 40.00 hours per week
Use the obtained values to find the utilization of baggers.
40.00
UtilizationBagger = 100%
100
= 40.0%
b. Assume that both baggers and cashiers are cross-trained to perform both activities so that they can serve customers
independently. Customers are now both checked and their groceries bagged by one individual. Further, assume that it takes
12 minutes for one individual to both cash out and bag each customer's groceries. Find the utilization of this new group of
11 cross-trained employees.
Find the availability of cross-trained employees.
AvailabilityCross trained = 11 persons 5 days week 5 hours day
= 275 hours per week
Find the average output rate for cross-trained employee.

Use the obtained values to find the utilization of cross-trained employees.
