They are measures of different things.

Acid number is a measure expressing the acidity of a substance. It is equal to the number
of milligrams of potassium hydroxide needed to neutralize the free fattyacids present in
one gram of the substance. It is propperly applied only to fats.

pH is a measure of the concentration of free hydronium ions in a water solution. It is a


logrithmic function. If they were both applied to strong acids, which they are not, there
would be a correlation.

pH and acidity are related terms that explain one another. Acidity is the amount of
hydronium ions present in a solution. pH is the scale used to measure the amount of
hydronium ions present in a solution. Therefore, pH can quantify the acidity of a system.
These terms are often used in aquatic chemistry which explains the behavior and
properties of water bodies. The main difference between pH and Acidity is that pH is a
quantitative measurement of acidity or basicity of a solution whereas acidity is a
qualitative measurement of acidic properties of a solution.

Relationship Between pH and Acidity


 Both pH and Acidity can measure the acidic properties of a solution.
 pH is the quantitative measurement of acidity.
 Since acidity is the amount of hydronium ions present in a solution, pH is
the logarithmic value of inverse of acidity.
 Higher the pH value is, lower the acidity of a system.
 Lower the pH value, higher the Acidity of a system.

he total acid number (TAN) is a measurement of acidity that is determined by the amount


of potassium hydroxide in milligrams that is needed to neutralize the acids in one gram of oil.[1] It
is an important quality measurement of crude oil.

It is interesting how widespread the misunderstanding is about the


difference between pH and the acidity of fatty acids. There is no
direct correlation between the pH, which is a measure of the acidity
or basicity of a solution defined as the cologarithm of the activity of
dissolved hydrogen ions (H+), and the acidity of fatty acids, which is
given the value of the mass of potassium hydroxide (KOH) in
milligrams required to neutralize one gram of oil, fatty acid or resin.
The acid number is a measure of the amount of carboxylic acid
groups. (There is a recent paper that demonstrates the use of a
special reagent and procedure to correlate pH metrics with the acid
value of fatty acids, however, I have not seen this used in industry
and do know how the two systems correlate in conservation. In
addition, there is an outdated methodology to determine the pH of
oils and varnishes, known as the Potentiometric Method.) It must be
remembered that the dissociation of acids in organic media is quite
different from that of aqueous media, and the effects of these two
on substrates and paint films are quite different.

Oils and alkyds contain carboxylic acids, so these are measured as


"acid value," which is different from pH values and the effects that
aqueous acids have on substrates, such as wood and textile fibers.
