Flapjacks Recipe

Flapjacks  

INGREDIENTS 
 
2 C. Flour 
¼ C. Sugar 
2 tsp. Baking Powder 
½ tsp. Baking Soda  
1 tsp. Salt 
¼ C. Butter 
● Melt in microwave 20 seconds 
1 ¾ C. Buttermilk (milk & vinegar) 
● 2 T. Vinegar 
2 eggs 
 
DIRECTIONS 
1. Sift dry ingredients together into large metal bowl. 
2. Separate eggs. 
3. Mix egg whites​ with ​buttermilk​ in a mixing bowl. ​Be 
careful not to spill. 
4. Mix egg yolks​ with ​melted butter​ in colored bowl, then 
add to milk mixture. 
5. Pour​ milk mixture on dry ingredients. 
6. Using ​whisk​ or fork, mix lightly – ​10 times​ – it will be 
lumpy​ (Walk away!!) 
7. Heat large frying pan on medium with butter or spray 
lightly. (Frying ​pan is ready when sprinkled water dances.) 
8. Pour batter on pan using ​ladle​ and cook until ​edges bubble 
and ​bottom browns. 
9. IF USING FRUIT.​ Add fruit now and then flip. (Flip close 
to surface so fruit doesn’t spill out.) 
10. Cook until ​dry looking​ and browned 
11. To keep warm:​ Turn oven to 200 and put warm flapjacks 
between 2 layers of cloth towels on jelly roll pan in the 
oven until all flapjacks are finished.
