Flapjacks
INGREDIENTS
2 C. Flour
¼ C. Sugar
2 tsp. Baking Powder
½ tsp. Baking Soda
1 tsp. Salt
¼ C. Butter
● Melt in microwave 20 seconds
1 ¾ C. Buttermilk (milk & vinegar)
● 2 T. Vinegar
2 eggs
DIRECTIONS
1. Sift dry ingredients together into large metal bowl.
2. Separate eggs.
3. Mix egg whites with buttermilk in a mixing bowl. Be
careful not to spill.
4. Mix egg yolks with melted butter in colored bowl, then
add to milk mixture.
5. Pour milk mixture on dry ingredients.
6. Using whisk or fork, mix lightly – 10 times – it will be
lumpy (Walk away!!)
7. Heat large frying pan on medium with butter or spray
lightly. (Frying pan is ready when sprinkled water dances.)
8. Pour batter on pan using ladle and cook until edges bubble
and bottom browns.
9. IF USING FRUIT. Add fruit now and then flip. (Flip close
to surface so fruit doesn’t spill out.)
10. Cook until dry looking and browned
11. To keep warm: Turn oven to 200 and put warm flapjacks
between 2 layers of cloth towels on jelly roll pan in the
oven until all flapjacks are finished.
