Recipe: Mexican tacos
Origin of the recipe (history)
In fact, it is not possible to determine exactly on what date this was invented but
it is believed that the dish has its origin in pre-Hispanic Mexico. One of the
theories is that this existed because men worked all day in the field, so women
invented this food as it was easy to transport and consume.
A theory about the possible origin of the word taco is the term 'tlahco' of
the Nahuatl language , meaning 'half' or 'in the middle', in the sense that food is
placed in the middle of the corn tortilla . The word in Nahuatl to refer to the corn
tortilla (indigenous pre-Columbian invention) is 'tlaxcalli'.
According to some researchers, the first taquiza (collective meal consisting of
eating tacos) of which we are aware was documented by Bernal Daz del
Castillo in his chronicle, "True History of the Conquest of New Spain", and was
carried out by Hernn Corts in Coyoacn for his captains. 2 3
The birth of the taco comes from tortillas with pre-Hispanic molli, which were
prepared on hot stones and decorated with cochineal, some of them
accompanied by beans and chili, ingredients that still constitute the food base of
the Mexican people. The stew that was put in the then to the taco, was based
on the meat that was consumed during that time.
Mexican food was based on turkey (as it is called the turkey in Central Mexico),
since it was the only domesticated bird. There were also hairless dogs
(Xoloitzcuintle) that were fattened for consumption. His flesh was less esteemed
than that of the turkey.
En realidad no se puede determinar con exactitud en qu fecha ste fue inventado pero se cree que el plato
tiene su origen en el Mxico prehispnico. Una de las teoras es que este existi debido a que los hombres
trabajaban todo el da en el campo, as que las mujeres inventaron este alimento ya que era fcil de transportar
y de consumir.
Una teora sobre el posible origen de la palabra taco es el trmino 'tlahco' del idioma nhuatl, que significa
'mitad' o 'en el medio', en el sentido que el alimento se coloca en el medio de la tortilla de maz. La palabra
en nhuatl para referirse a la tortilla de maz (invento indgena precolombino) es 'tlaxcalli'.
Segn ciertos investigadores, la primera taquiza (comida colectiva que consiste en comer tacos) de la que se
tiene conocimiento, fue documentada por Bernal Daz del Castillo en su crnica, "Historia Verdadera de la
Conquista de la Nueva Espaa", y fue realizada por Hernn Corts en Coyoacn para sus capitanes.2 3
El nacimiento del taco proviene de las tortillas con molli prehispnicas, que eran preparadas sobre piedras
calientes y decoradas con cochinilla, algunas de ellas acompaadas de frijol y chile, ingredientes que todava
constituyen la base alimenticia del pueblo mexicano. El guiso que se le pona en ese entonces al taco, se
basaba en la carne que se consuma durante esa poca.
La comida mexicana se basaba en el guajolote (como se llama al pavo en el Centro de Mxico), ya que era la
nica ave domesticada. Tambin haba perros sin pelo (Xoloitzcuintle) que se cebaban para el consumo. Su
carne era menos estimada que la del guajolote.
Ingredients
Chicken tacos
This taco is made with cooked chicken and shredded, mole, onion, and is
accompanied with a tortilla made with corn flour, wheat flour, lard, salt and
water.
Ingredients:
750 gr of chicken breast, cut into small pieces
1/8 cup red wine vinegar
Half lemon juice
1 teaspoon of sugar
teaspoon of salt
teaspoon black pepper
2 green onions, chopped
2 cloves garlic, minced
1 teaspoon oregano
10 flour tortillas
1 diced tomato
cup of lettuce
cup semi hard cheese
preparation:
Put some oil in a hot pan and saute the chicken until well cooked and
golden.
Then add the vinegar, lemon juice, sugar, salt, pepper, green onions,
garlic and oregano. Rhoda for about 10 minutes.
Heat the tortillas and fill them with the chicken mixture. On top, place
cheese, tomato and lettuce.
You've got your chicken tacos ready !
Ingredientes:
750 gr de pechuga de pollo, cortada en trozos pequeos
1/8 taza de vinagre de vino tinto
Jugo de medio limn
1 cucharadita de azcar
cucharadita de sal
cucharadita de pimienta negra
2 cebollas de verdeo, picadas
2 dientes de ajo, picados
1 cucharadita de organo
10 tortillas de harina
1 tomate en cubos
taza de lechuga
taza de queso semi duro
Preparacin:
Coloca un poco de aceite en una sartn caliente y sofrita el pollo
hasta que quede bien cocido y dorado.
Luego agrega el vinagre, el jugo de limn, el azcar, la sal, la
pimienta, las cebollas verdes, el ajo y el organo. Rehoga durante
unos 10 minutos.
Calienta las tortillas y rellnalas con la mezcla de pollo. Por arriba,
coloca queso, tomate y lechuga.
Ya tienes prontos tus tacos de pollo!
