pannekoek
The Dutch Pancake – Pannekoek – is noted for its large size and light
texture which provides the ideal base for an appetizing savoury or sweet
dish. The style of cooking varies from other pancakes and crepes as the
ingredients are cooked into the pancake and then the garnishes are added.
The Pannekoek is often mentioned in the history of the Low Countries
and there are many interesting customs and traditions surrounding the
Dutch Pancake. For instance, in the area of Friesland, up until about 1850,
the traditional wedding breakfast for the young couple would have been
a pancake with milk and honey. In the Country districts, pancakes are the
traditional dish for Christmas Eve and also used to celebrate the Harvest.
