The wonderful national noodle dish of Thailand, it is now served in many trendy restaurants. It can be adjusted to your taste, add ingredients that you like and make it as spicy or tart as you want to. It is also great as a basis for a stir fry of leftovers. This is a recipe for those who like it HOT, if you can’t handle the heat, go easy on the chile sauce.

The noodles should soak for 20 minutes in a large bowl of hot tap water.

Stir the fish sauce and water in a small bowl.

Add vegetable oil to a wok or large skillet that has been heated over high heat.

Preheat the oven to 350 degrees F (175 degrees C).

Grease a 9×13 inch baking pan.

In a medium bowl mix together the butter brown sugar and egg until smooth.

Stir in applesauce.

Combine the flour baking soda salt and pumpkin pie spice; stir into the applesauce mixture until well blended.

Spread evenly into the prepared pan.

Bake for 25 minutes in the preheated oven or until edges are golden.

Cool in the pan over a wire rack.

In a small bowl mix together the confectioners’ sugar and margarine.

Stir in vanilla and milk until smooth.

Spread over cooled bars before cutting into squares.

After removing the eggplant and setting it aside, clean the skillet with a paper towel.

In the same skillet, heat the 6 tablespoons of oil to medium.

Cook the cumin, fenugreek, kalonji, and sesame seeds after stirring them in for about two minutes, or until the cumin turns golden.

Turn down the heat before adding the ginger and garlic and stirring.

Add the onions and green chile peppers, and cook and stir for another 10 minutes, or until the onions are golden.

Thread each jumbo olive onto a toothpick lengthwise through the existing holes.

Anchor the toothpick onto a carrot slice (line belly up with feet); set a small olive on top (beak facing forward).

Place penguins on a plate; refrigerate until assembly.

This is a yummy salad my roommate from Croatia made all of the time. It’s perfect for lunch. You just want to keep eating and eating! Make right before serving, doesn’t refrigerate well.

Combine the rice and water in a saucepan and bring to a boil.

Reduce heat to low cover and simmer for 20 minutes or until rice is tender and the water has been absorbed.

In a medium bowl toss together the romainee lettuce carrot and tuna.

Pour the olive oil and vinegar over this mixture and season with salt and pepper.

Toss to coat.

When the rice is done cool for about 5 minutes then toss with the salad.

The warm rice will wilt the romaine lettuce slightly.

Taste and adjust the amounts of vinegar and oil or salt and pepper if desired.

Serve immediately.

This does not keep well.
