Unlike furfural, knowledge of HMF conversion has been limited because there has not been a readily available commercial source for an HMF conversion product. Following the furfural conversion route, it has been assumed that HMF is converted to HMF alcohol (Nemirovskii et al., 1989). (2001), and they suggested that an alleviation of oxidative damage is strongly involved in AM protection against nodule senescence. In dual colonization experiments the colonization frequency (F) in soybean roots was similar during all the mycorrhizal treatments used, and this was not affected by the presence or absence of Bradyrhizobium japonicum or by drought stress (see Table 2.2).

The detrimental effect of Na is a result of its ability to compete with K for binding sites essential for various cellular functions. Potassium activates a range of enzymes, and Na cannot substitute in this role. Thus, high levels of Na or high Na/K ratios can disrupt various enzymatic processes in the cytoplasm. Mycorrhizal Acacia and Sesbania plants have been found to have a higher concentration of K in root and shoot tissues at all salinity levels (Giri and Mukerji, 2004; Giri et al., 2007). Similar results were reported by Sannazzaro et al. (2006) in L. tenuis plants colonized by G. intraradices. It seems that higher K accumulation by AM plants under salt-stress conditions

Following evaluations of OTA carried out in the 1990s, the Joint FAO/ WHO Expert Committee on Food Additives (JECFA) has established a provisional tolerable weekly intake of 100 ng/kg body weight (b.w.) per week for OTA (JECFA, 2001). The World Health Organisation (WHO) has proposed a provisional tolerable daily intake of 16 ng/kg b.w., and this was lowered to 5 ng/kg by the EC Scientific Committee on Food in 1998 in view of the carcinogenicity of OTA. More recently, the Panel on Contaminants in the Food Chain of the European Food Safety Authority (EFSA) concluded that, according to the estimated exposure levels (2-8 ng/kg b.w./day), exposure to OTA varies between 15 and 60 ng/kg b.w./week. Based on the evaluation of the toxicity of OTA, the EFSA established a tolerable weekly intake of 120 ng/ kg b.w. for OTA (EFSA, 2006). The main contributors to OTA intake in the EU are cereals and cereal products and, to a lesser degree, wine (see Chapter 9, this volume), coffee, beer, pork, pulses and spices (EFSA, 2006).

Three known transcription factors, PDR1, PDR3, and YAP1, were examined and, in this subset, YAP1 was shown by the model to be one of the most influential regulators in the early response to HMF stress (see Fig. 8.4). This is strongly supported by current knowledge and documented experimental observations (Teixeira et al., 2006). For example, the following edges have been reported as transcriptional regulations, including YAP1 to

A hepatoprotective effect on ethanol-induced liver damage has also been reported for a hot-water extract of G. lucidum (Lee et al., 1998). It was suggested that this effect may be due to a superoxide scavenging activity, as animals treated with the extract had decreased levels of malonic dialdehyde (Lee et al., 1998). A G. lucidum extract (GLE) has been reported to improve CCL1,-induced liver fibrosis, leading to increases in plasma albumin and the albumin/globulin ratio, a reduction in the hepatic hydroxyproline and decreased activities of transaminases (Lin and Lin, 2006). In addition, GLE treatment may decrease expression of transforming growth factor-f1 (TGF-B1) and methionine adenosyltransferase (MAT1) (Lin and Lin, 2006). A polysaccharide isolated from G. lucidum has been reported to reduce the serum aspartate and alanine transaminases, alkaline phosphatase, total

Table 10.5. Cardioprotective effects of Ganoderma extracts and compounds. One of the possible mechanisms for reducing cholesterol is the inhibition of enzymes involved in cholesterol biosynthesis. Lanosterol analogues have been identified among G. lucidum triterpenes, and these compounds can act as dual inhibitors by suppressing lanosterol 14a-methyl demethylase (P-450DM), and as partial inhibitors of HMG-CoA reductase (Frye and Leonard, 1999). Ganoderic acid C, its derivatives and 26-oxygenosterols (ganoderol A and B, ganoderal A and ganoderic acid Y) can therefore potently inhibit lanosterol 14a-demethylase (Komoda et al., 1989; Hajjaj et al., 2005). As mentioned above, 7-oxo-ganoderic acid Z and 15-hydroxy-ganoderic acid S can suppress the activity of HMG-CoA reductase (Li et al., 2006). Ganoderic acid F has been reported to give some atherosclerosis protection due to the inhibition of an angiotensin-converting enzyme (Morigiwa et al., 1986), and ganodermic acid S has been shown to inhibit platelet aggregation (Su et al., 1999).

Ganoderma lucidum polysaccharides (GLPS) have been reported to increase insulin and reduce glucose serum levels in a dose-dependent manner in alloxan-induced diabetic mice (Zhang et al., 2003) and, interestingly, GLPS was also found to inhibit alloxan-induced activation of NF-«B in the pancreas (Zhang et al., 2003). GLPS was able to decrease serum glucose and triglyceride levels in streptozotocin-induced diabetic mice, and improved the renal morphometric changes and oxidative stress state of diabetic mice. These observations suggest that GLPS may prevent or delay the progression of diabetic renal complications (He et al., 2006). A hypoglycaemic effect has also been shown for GLPS in normal mice, through its insulin-releasing activity. This was due to a facilitation of Ca** inflow to the pancreatic beta cells (Zhang and Lin, 2004). The commercially available G. ucidum water- soluble polysaccharides (Ganopoly) have been shown clinically to decrease the postprandial blood glucose levels in type-2 diabetic patients (Gao, Y. et al., 2004), although the major compounds responsible for the hypoglycaemic effects have been identified as peptidoglycans (Zhou et al., 2007).

Wangiella dermatitidis), disruption of melanin production leads to markedly reduced virulence in animal models (Kwon-Chung eft al., 1982; Dixon et al., 1987). Melanin has also been shown to reduce the susceptibility of C. neoformans and H. capsulatum to amphotericin B and caspofungin, possibly by binding these drugs (van Duin et al., 2002; Ikeda et al., 2003). This effect is not apparent with azole drugs (van Duin et al., 2002). Finally, melanin has even been found in the yeast Candida albicans, suggesting that it may be a more fundamental and common virulence factor than previously thought (Morris-Jones et al., 2005).

Chitinase genes of fungi can be functionally expressed in various hosts, such as E. coli, yeasts, filamentous fungi and plants.
