It seems I have fixed the issue. Hummingbird was minifying and combining scripts across the site. Despite setting it so that it would exclude Stripe, it was still impacting after about 20 minutes. No idea why the delay (not page caching).
Turning ‘Asset optimisation’ off completely in the plug-in seems to have solved the issue. I will swap to something that enables you to exclude checkout page from minification and combine.
