I solved the issue by using https://fullsiteediting.com/block-theme-generator/ to create a new theme with (Basic -More opinionated than Underscores (_s).) selected.
Then I simply dropped the theme.json file from the newly created theme into my theme.
Finally I edited this part of the theme.json file:
"layout": {
"contentSize": "1220px",
"wideSize": "1280px"
},… which gives me the desired dashboard page editor layout width 👍

The theme is a fork of https://github.com/automattic/_s So you could say its an old theme.
Is there a plugin function I can use to add Appearance > Editor > Style > Layout ?
Or do you have a better solution?

Yes I upgraded to 3.0.5 and the card input fields disappeared again so I rolled back to 2.9.6.
I suspect it might be something to do the Gutenberg block editor but I haven’t got hours and hours to spare messing around with this so I’m sticking to 2.9.6.

Thanks for your suggestion above, I tried that and sadly it didn’t work. So I’ve rolled back to version 2.9.6 which works fine for now. I’ll lookout for the next update from you guys.

This is not ideal, why does this not work in the latest version?
