Unless your paginated pages have the exactly the same content on as your first page you shouldn’t use the canonical tag on it. The Canonical tag should be used on pages with identical content as mentioned here:

In yoast titles settings you can just replace %%sep%% with the character you want to use

Have you tried checking ‘Force re-write’ titles in the yaost settings?
View the source code of the page. If the meta description is in fact there, its probably Google creating its own descriptions for the SERPs, which it does quite often.
