Rank Math’s add image missing ALT attributes should also work with .webp image format.
Please share the affected URL so we can check the image as well.
Meanwhile, please note that the Add missing ALT attributes options in Rank Math are not added to your images in the media gallery as the feature works only on the fly (applied on the front end when your page loads on the browser).
Also, images added by your WordPress theme or page builder to various sections like your sliders, thumbnails, icons, etc. will not be affected as they only apply to images added directly to your content.
