Sorry guys!

This issue is more complex than my original question, so I’ve taken it down until I have a clearer idea of what is going on.

Just so you can add this to your “known issues” the plugin in question is

So custom roles are removed with this plugin too?

After I posted my reply above, I returned to my admin page to see that there was an update available for Ultimate Member.

The changelog included:
Fixed: bug with changing user role and status in backend

I crossed my fingers and updated. All still working fine, so looks like they have got it sorted.
