Programmatically set From email and From name

This is a really great plugin, super easy to setup.

I do have a question in regards to the From Email and From name. I would like to set these programmatically from within my plugin. I’ve set the respective values in the header but the plugin overwrites these with the values from the settings. I was looking for a filter but could not find a way to use the values provided by my plugin. Would it be an option to make the Sender Settings optional? I need each user (belonging to the same organization) to send emails using their address and name.
