Popularity Sort for some momth

Great question. WooCommerce increments a custom field, total_sales on each product when an order is placed. It uses this to sort products by sales.

The field does not keep a log of when this was changed. Because of that, it’s not going to let us sort by sales over time.

One possibility would be to create a function that gets sales information from orders and then periodically updates this on products. Then create a new sorting option to use it instead of the total sales.

Putting that together will be a pretty complex undertaking. I’m going to leave it open for a bit to see if anyone is able to chime in to help you out.
