My issue is similar to this issue,

I couldn’t find any solution in the above thread, if anyone has found the solution then please do help me! The Shiprocket support is not reliable and not helpful. Already raised the ticket twice.

    Issue description:
    1) When the user places an order, the stock level for the ordered item decreases, then the order status is set to “pending payment”, and the status remains pending until the user pays for the order.
    2) Once the user completes the payment, the order status is set to “Processing”. When the order status is set to “Processing”, that is when Shiprocket pulls the order into shiprocket orders dashboard.
    3) When our team member ships the order from shiprocket, that is when the stock level for the ordered item increases in Woocommerce, and the order status is set from “Processing” to “Pending Payment”. The order status is going backward whenever our team member is shipping any order.
    4) Then the status changes from “Pending payment” to “Cancelled”.

This issue has been resolved for me. Turns out, I have been using the REST API to use ShipRocket, instead of this plugin. I have not installed this plugin.
Incase you are facing the same issue using the REST API, I solved this by correctly entering the mapping status labels on ShipRocket channel page. The mapping status labels should be same as Woo-commerce status.
