Currently, both actual and ordered weight will be displayed as you said.
It is not possible to display it as: Product 1 (1.0kg) 2 € 34.98

Let us add this to our to do list and check for the possibilities.

Meanwhile, you can disable the Actual Weight.
Something like:
https://nimb.ws/nhDlsP (to reduce length of email)
This might be the possibility via our end.

This snippet will helps to display info as: Product 1 (1.0kg) €34.98 in emails as per your requirement.

You can add the above snippet via Code Snippets plugin or via Child theme -> functions.php file
