Is there documentation on how to customize the layout of Product Image Gallery block?
WooCommerce Blocks are the easiest, most flexible way to display your products on posts and pages!
For more information on what blocks are available, and how to use them, check out the official documentation.
The Product Image Gallery block allows you to add an extra image gallery to your single product template, and has no options for customization.
Note that, in order for the Product Image Gallery block to be displayed properly, you need to add it while editing the single product template. (source)
Also, the Product Details block needs layout options (other than tabs).

(Salesforce Commerce Cloud may have the best Single Product page design. Most big brands (Nike, LV etc.) use it.)
Just to clarify, are you referring to the page linked here, or otherwise?
Furthermore, are you trying to recreate it, from what I gather. Correct?

Thank you @anastas10s for the links. I read most of the doc. Disppointingly:
“The product Image Gallery block has no options for customization.”
“The Product Details block has no options for customization.”
I guess I’ll have to wait for the options to be added.

Ah, I see what you mean. If you’re selling only a handful of products, one possible workaround you can try is creating a custom template for each of your products and using the WordPress gallery/image block to display the product images. You can sort them however you like. :β)

Thank you @babylon1999 , I’m happy with the Woo blocks default layout, and looking forward to their layout options to be added by Woo team.
My workaround are changing the width of container blocks (Group & Columns) in Site Editor, and changing the width of Product Image Gallery block with CSS.
WP core blocks and Woo blocks make designing layout so easy. Keep up the good work!
