Hi: I realize I’m probably missing something obvious, but I can’t figure out how to prevent comments from appearing until I approve them. There doesn’t seem to be an option in the Comments section of WordPress… Thanks.

The option would be in the Options section.

Try looking at the Settings->Discussion page.
If you’re still using 2.3.3, it’ll be Options->Discussion.
