I am afraid it will require some custom coding to hide Saturday and Sunday columns from a calendar. Please go to Appointments > Settings > Working Hours, choose a service provider and set Work option to No, for Saturday and Sunday.
This way these days will no the possible to book. Please see this screenshot:
