Forms with content?

Hello,
I am a new WordPress developer (about a month) working on a project as an in-house programmer. Our system has custom tables feeding data to templates that create pages. We need to create a way for users to enter data into the custom tables. My boss doesn’t want me to re-invent the wheel and create my own plugin, so I am researching existing plugins.
I really like CSDES, but since I don’t think we need searchable forms (the search will be elsewhere), I decided to experiment with the Data Storage plugin. It looks like a very good plugin, but there are 2 things I wish it did.
Since our custom tables already exist, the first thing I want Data Storage to do is write to existing tables, not ones created and maintained by DS. (Thinking about it, though, this is probably my preference and not a requirement; whatever the tables are named will be invisible to the users. I guess I just don’t want to re-enter a lot of data.)
There is at least one use-case where seeing existing data would be helpful while entering new data, but the forms DS creates only have data fields. They do not have any content (even to explain what a field is). I would like forms that allow me to put data and text in them.
So my question is this: Do you think the Data Storage plugin could be easily modified (by you or me) to do these two things, or should I start from scratch?
