File Attachments

Is there a way to best use this plugin with file attachments securely? I have a client that wants people to attach files that they only want sent and stored via email and not saved on the server. This is so sensitive information is not accessible to anyone who could possibly hack into the server. Or is there a best practice for securing file uploads in general through WordPress?
