When you go to Guestbook > Settings > Debug-tab, and use the test button, does it give an error on the emoji test as well?
If so, can you share the information that is on that debug page? It might be that utf8mb4 is not supported.
By the way, which WordPress version is this?

After testing I get no error. The WP version is 6.1.1 (db: 53496) .
When I edit an entry and add an emoji, I get the message “Fehler beim Speichern aufgetreten.

I think it is best to contact your hosting provider. MySQL seems misconfigured when it comes to character sets. It should support utf8mb4 all over, but there are too many options that are set to utf8mb3. I think that is very strange, since it is a very recent version of MySQL and these problems should have been long gone.
