That option is still in Check & log Emails > Settings > Logging.
I recommend installing this plugin: https://wordpress.org/plugins/health-check/
After you install and activate the above plugin it has a Troubleshooting mode which allows you to have a vanilla WordPress session, where all plugins are disabled, and a default theme is used, but only for your user – your visitors will still see the normal website.
Go to its troubleshoot mode and only activate this plugin and see if the same happens with a default WordPress theme (Twenty Twenty-One for example) and no other plugins.

Here is my experience, it might help to solve the problem or to investigate further:
I roll back to version 1.0.4,
I enable logging,
I update to the latest version (1.0.6),
and done.
The checkbox was missing for enabling logging when installing version 1.0.6 by default.
