Email change confirmation mail sent to empty email address

Hi there,
we have had a very good experience with the plugin so far. Unfortunately, since around two months, we encountered the following bug several times: If a user requests to change his email, the email verification for said request is not sent to the existing email, but rather only the profile name is set in the address field of the confirmation email.
This prompts the following error from Post SMTP, the plugin we use for sending emails via our Office 365 SMTP server and have not had any issues with over the past years whatsoever:

As a sanity check, I confirmed that the wp_users table still had the correct (original) email in place.
