Testing for you today I was able to change the registered WordPress user details on my test installations and those changes were reflected on the Customer List section of WooCommerce.
Below is a screenshot of customer details before any changes.

When changing the user name and details remember to select the new name from the Display name publicly as setting too.

I confirm seeing the same thing on my personal site as well. It appears this has been reported as an issue in the WooCommerce admin plugin (included as part of core WooCommerce) here:

@stuartduff Just because you can’t reproduce my issue hasn’t made it go away 😉 I was wondering whether it happened because the Customer that was changed was also a User but your screenshots seem to negate this. I can also confirm the Display Name Publicly as is correct.
In fact, from the issue report it appears that the row in the table wp_wc_customer_lookup is not being updated because I can see the old information in there through phpMyAdmin and, in fact, changing it there changes the details in the Customer’s list
