Cookies usage outline for Terms of use

Hello:
My client will be selling products in the EU and has tasked me with sourcing all of the cookies used/set by the plugins she is using on her ecommerce site. Do you have an outline of how you use/set cookies and what user data they track/store so I can add this to her privacy policy/terms of use document and keep her from being taken to court in the EU?
Any help would be appreciated. Thanks.
