When you say ‘group the table lines by Category column’ do you mean sorting the products by category? WCPT does not have a ‘grouping’ facility right now. While the plugin does have ‘sorting’ facility, it cannot sort products by category.
Instead, you can sort products by ‘custom field’ in WCPT PRO, the premium version of the plugin. Then, if you create a custom field on each product and store the product’s category name in that custom field, you can sort products by that custom field. This simulates sorting by category.
For a more detailed explanation on this topic please see the documentation here. It describes how to sort by attributes using the custom field method. The same method applies for sorting by category.

Also, in case I misunderstood your query and you wanted to filter the products by category that can be done using the category filter included in WCPT Lite. You can see the table navigation related tutorial videos here.
If you want to display the table without the category filter, but still re-use the same shortcode for multiple category tables you can use the category shortcode attribute. Please see the documentation on shortcode attributes here.

My table will stay as in origin. I only needed to grouped the products by Category with lite version
