Rename the folder of the plugin to “eu-vat-for-woocommerce_OLD”
Sign-in to the console
Rename the folder back, then the plugin will be inactive
Download the old version and upload it in the section Plugins to make a downgrade

Not sure if the download @web13 offered supports Pro users. I how have two plugins (3.0.1 and deactivated 3.1.0). If 3.1.x is released, I should probably only have the Pro version?
Also, my WordPress has auto-updates enabled so it will probably break again soon enough. I hope the fix will be there soon enough for me to have to dive in deeper and disable auto-updates.

The directory eu-vat-for-woocommerce/vendor/composer/../wpfactory/wpfactory-admin-menu/src is missing from the plugin (there’s only langs).

It should be fixed in the free version as well.
Do you mean there is only one langs directory in the eu-vat-for-woocommerce? There are no includes, vendor, etc. directories there? If that’s the case, could you please try deleting and then installing the plugin again?
